Soft, sweet apples stuffed with a crunchy spiced oat crumble and finished with a drizzle of health(ish) salted caramel sauce – an absolutely banging pud for these chilly days.

Serves 2.For the baked apples:▫️ 2 apples▫️ 60g rolled oats▫️ 1 tsp cinnamon▫️ 1/2 tsp nutmeg▫️ 20g coconut sugar▫️ 20g pecans, finely chopped▫️ 20g agave syrup▫️ 25g coconut oil, melted▫️ Pinch of sea salt
For the salted caramel sauce:▫️ Equal parts date syrup, tahini, and oat milk▫️ A pinch of sea salt

Method:
1. Preheat your oven or air fryer to 180C.
2. In a bowl, mix together the rolled oats, cinnamon, nutmeg, coconut sugar, pecans, agave, coconut oil and salt to make the oat crumble.
3. Halve and core the apples.
4. Place the apple halves flesh-side up in a baking dish. Lightly spray with oil and sprinkle with a little extra coconut sugar and cinnamon. Spoon the oat mixture into the center of each apple half and pack it in firmly.

Remove the foil and bake uncovered for an additional 15 minutes until the apples are tender and the crumble topping is golden and crisp. (For really soft apples, bake covered for an extra 5–10 minutes.)
6. For the air fryer: Place the prepared apple halves directly into the air fryer basket. Cook for 15 minutes at 180C, then check for tenderness. If needed, cook for an additional 3–5 minutes until the apples are soft and the topping is crisp.
7. While the apples bake, prepare the salted caramel sauce by whisking together equal parts date syrup, tahini, and oat milk. Add a pinch of sea salt to taste.
8. Serve the baked apples warm with a dollop of coconut yoghurt and a drizzle of salted caramel sauce.! #short#shorts #thelolipoppiera
