Ingredients:

500g eggplant

20g garlic
20g ginger
150g onion

30g oil
1 tsp mustard seed
2 tsp cumin seed
1/4 tsp ajwain seed
1/2 tsp fenugreek powder

200g canned tomatoes
200ml water
1 tsp okinawan black sugar(or jaggery)
1 tsp turmeric powder
1 tsp coriander powder
1/4 tsp chili powder
2 tsp salt

Instructions:

1. deep fry eggplant
2. in a pot, heat oil and add mustard seed, cumin seed, ajwain seed and fenugreek seed.
3. add garlic, ginger and onion. heat thoroughly.
4. add water, canned tomatoes, sugar, turmeric powder, coriander powder and salt. then blend until smooth with a blender or a mixer.
5. add deep fried eggplant.
6. Enjoy!

マスタードシード 小さじ1
クミンシード 小さじ2
アジョワンシード 小さじ1/4
フェヌグリークパウダー 小さじ1/2
太白ごま油 30g

ニンニク 20g
生姜 20g
玉ねぎ 150g
トマト缶 200g
水 200g

塩 小さじ2
チリパウダー 小さじ1/4
コリアンダーパウダー 小さじ1
ターメリックパウダー 小さじ1
黒糖 小さじ1

「作り方」

1、ナスを素揚げする。
2、太白ごま油を鍋で火にかけ、マスタードシード、クミンシード、アジョワンシードをテンパリングする。フェヌグリークパウダーも加える。
3、ニンニク、生姜、玉ねぎを加えて火が通るまで炒める。
4、トマト、水、チリパウダー、コリアンダーパウダー、ターメリックパウダー、黒糖、塩をブレンダーで滑らかになるまで撹拌する。
5、1の揚げナスを加える。
6、エンジョーイ!

    If only the tomatoes were fried with onions and spices, and water was added later (just before grinding), it would've tasted divine!

    If you fry garlic and ginger in an hot oil before adding onion, I think it would give even better taste😋.

  6. Hi from India! Happy to see Indian recipe. Tip to improve this…. Once you blend the gravy…. Saute it till it releases oil from the sides and then add fried egg plant. Garnish it with chopped fresh coriander leaves.

  7. While the eggplants were fried, I was like “oh this is easy….”. But then he started adding those other ingredients and I started to lose hope of recreating this dish 😅
