    In this video, I’ll show you how to make a yummy, cheesy pumpkin chicken lasagna. Don’t worry, it’s not sweet! It’s a rich and creamy dinner that’s great for fall or any time you want to make something special. I will layer chicken mix, a layer of sliced pumpkin , and double layer of cheese.

    Ingredients :
    1/2 Pumpkin
    200 gm Minced Chicken
    1 tbsp Ginger Garlic paste
    1 tbsp Soy Sauce
    1 1/2 tspn Curry Powder
    1 tspn Paprika
    Salt & Pepper
    1 Chopped Shallot
    3 tbsp Tomato Paste
    1 tspn All Purpose Flour
    1 Cup Mozzarella Cheese

    Steps :
    1. Cut, peel and slice the pumpkin not too thin and not too thick.

    2. Wash it with normal water, pat it completely dry with a kitchen towel then marinate it with salt, paprika and olive oil, Set it aside.

    3. In a microwave-safe bowl add minced chicken, tomato paste, chopped onion, ginger-garlic, curry powder, soy sauce, corn starch and pepper powder. Mix everything well.

    4. Cover it with food wrap and microwave for 5–6 minutes. You can also cook it in a frying pan but I made this version in the microwave and it came out really well.

    5. Now in a pan roast the pumpkin slices on both sides until they turn golden brown but don’t use any oil.

    6. Now in a baking dish start layering first add a layer of chicken mixture then cover it with the roasted pumpkin slices.

    7. Then on top of the pumpkin slices add a layer of cheese followed by another layer of chicken and then more cheese, Drizzle a little olive oil on top and cover it.

    8. Bake in a preheated oven at 350°F for 10 minutes covered then remove the cover and continue baking for another 5–7 minutes or until it looks fully cooked and slightly golden on top.
