⭐️ Coleslaw is a classic side dish that combines crisp cabbage, shredded carrot, and creamy, tangy, and flavorful dressing.

It’s the perfect side dish for hearty burgers and sandwiches; it’s an excellent recipe to make ahead and enjoy for a bbq, picnic, or an exciting family dinner.

⭐️ Ingredients
4 cups (12 ounces) (360 grams) green cabbage thinly cut with a knife, mandoline slicer, or food processor
1 cup (3 ounces) (90 grams) red cabbage thinly cut with a knife, mandoline slicer, or food processor
2 carrots grated with large holes
1 handful parsley finely chopped

COLESLAW DRESSING
⅓ cup (80 grams) vegan mayo or regular mayo
⅓ cup (80 grams) Greek yogurt or non-dairy yogurt
2 tablespoons (30 grams) apple cider vinegar
1 tablespoon (15 grams) mustard
1 tablespoon (13 grams) sugar or maple syrup
1 teaspoon salt
¼ teaspoon black pepper

  1. Coleslaw is the unsung hero of dieting. I recently had to go on the first diet of my lifetime after a lifelong love affair with starch carbs caught me. When the metabolism goes it really goes lol. Even though i run 5 miles daily i gained 20 lbs in like 2 years. So i found slaw to be a great food item for my diet. Id cut my dressing using some real sugar and some stevia and add more carrots and raisins eventually cutting out the sugar totally. Its just so refreshing and convenient, perfect all summer. Cheap. Ill get experimental and add chopped olives and artichokes for a little sweet m tart thing. Love me some coleslaw. Imma try the yogurt deal, smart idea.

  2. You can use plain kefir too. I also like to use sour cream that contains probiotics, also add in some cherry tomatoes, celery seeds and thinly sliced red onion…so delicious! 😋

  4. Yum! Not my mama’s coleslaw but I’m trying to be on the healthier side.

    I used a store bought bag of coleslaw, and I used regular mayo, Dijon mustard, and doubled the sweetener with agave syrup. Still could use more sweetness, but that’s personal preference. So good! Thanks!
