pizza tortilla with grilled veggies let’s make this heat olive oil in a pan add smashed garlic cook till it brown add the tomatoes cook for a minute add basil sugar and salt now cook this till it gets soft and mushy in another pan heat olive oil add in the veggies olives salt and oregano cook this for two minutes and remove it from heat slitter ready roti from the side spread sauce on one fourth of it add the veggies on one fourth of it add some more sauce and add some cheese and basil now fold this really well while pressing it down gently heat some olive oil in another pan and grill the tortilla till it’s golden brown on both the sides and till the cheese melts let this cool and slit it in half and place it in a cliffin mix the remaining veggies along with the tomato sauce and get ready to pack this all up garnish with some cheese and olives and dig in
Pizza Tortilla with Grilled Veggies
This is a yummy and wholesome meal. You / your kids are going to looove this!
I use normal aata / whole wheat flour roti for this recipe, you could use any flour you like.
Also, I’ve used @stahl_india pans in this, which requires lesser oil to cook everything in.
For the Sauce:
1 tsp Olive oil
3 cloves of Garlic; smashed
3 Tomatoes; roughly chopped
1/2 tsp Sugar
Salt
2-4 Basil leaves
Heat olive oil, add in garlic cook till the garlic starts to brown. Add in tomatoes and cook on high heat for a minute, add in the basil, salt and sugar cook on medium heat for 5-8mins till mushy.
Veggies:
1/2 tsp Olive oil
1 cup veggies- I used broccoli and mushrooms
6-8 slices of olives
1/2 tsp Oregano
Salt
Heat olive oil, add the the veggies, salt, olives and oregano. Cook on high heat for 2 mins.
Remove from heat.
Assemble:
1 large Roti
Sauce
Veggies
Cheese – Processed / Mozzarella
1 tbsp Olive oil
Cut the roti from on corner only till it’s 1/2 cut. On 1/4th of the roti, spread the sauce, on the other 1/4th add the veggies, on the next 1/4th add the sauce and on the last 1/4th add the cheese.
Heat olive oil on a pan and cook this on both sides till golden brown, and till the cheese melts.
Let it cool and cut into 1/2.
Mix the remaining veggies with the sauce.
Let it cool and pack it up.
Substitutes:
Olive Oil – Butter
Olives – Chilli Flakes / Mangoes in Brine
Veggies – Capsicum, Bell Peppers, Zucchini, Green Beans, Carrots, Paneer
Basil – Oregano
Processed Cheese – Fresh Mozzarella / Cheddar

Anything less than 12cm wont be stable on gas cooktop. And its a total Waste of money to buy anything less than 14 cm. Just buying it for Cuteness? This is a cooking pot — a practical essential utensil Not a fluffy toy.
