    change that perception—that craftsmen
    always work long hours, get low pay, and

    is often seen as low-paying with long
    hours, and that's basically true. But if
    there are craftsmen who show that working
    hard now can lead to something , or serve as role models … [Music]

    stylish clothes . For me , since I like hip-hop , I buy
    clothes. Doing this job , if you work hard, you can become like
    them someday . It's not exactly a role model, but I
    can't say it's pretentious . I just think,
    if I can be a part of that , that's what I
    want right now . Food service is a dream ,
    I think. I still want to achieve it , so
    I'm only halfway there , but I think it's
    a dream-filled field. At the same time, you really gain so much . Cooking, talking about it , there are happy parts, fun parts . Of course, that means there are tough
    parts, hard parts too. But I think if you overcome those, a better

    Tsujicho Culinary School in Osaka, and
    then I started working at a restaurant in
    Fukuoka under the owner. Basically, they
    never intended for anyone to take over as
    master, so they never taught anyone the
    recipes. The recipes from the Shogun era,
    when that master was here, no longer exist
    in this world.I'm recreating everything
    from memory, trying to recall the flavors
    I've eaten all these years. So , customers do say the taste is a bit
    different now , but I trust the foundation of what I ate

    champon soup . It felt like I had to start from
    scratch, trying to remember what was in it
    . I kept thinking about the seasonings that
    were originally in this General's dish ,
    like, " Oh , did they put this in?" and
    then I'd add all kinds of things, taste
