What’s better than an easy, delicious, healthy sheetpan meal on a Monday? I tossed my favorite squash, shallots, tomatoes, Brussels sprouts, and chicken apple sausage on a sheetpan. Halfway through, I brushed on a maple dijon glaze and roasted till caramelized. Then I built a fall bowl on top of arugula topped with some goat cheese and some papitas for crunch.

This 30-minute sheet pan dinner comes together with chicken sausage, sweet cherry tomatoes, and red onion, all brushed in a maple-mustard glaze that’s tangy, sweet, and addictive. Tossed over arugula with goat cheese and pepitas for crunch…this is the kind of meal that feels cozy but light. I did this after a 3-day trip and it saved me.

    Ingredients (Serves 4–5)

    🥘 Sheet Pan Ingredients:
    • 4 chicken apple sausages, sliced into rounds
    • 2–3 delicata squash, halved, seeded, and sliced into ½-inch crescents (no need to peel)
    • ~2 cups Brussels sprouts, trimmed and halved
    • 1 large shallot, peeled and quartered
    • 1 heaping cup cherry tomatoes
    • 1½–2 tbsp olive oil
    • Salt and black pepper, to taste

    🍯 Maple-Mustard Glaze:
    • 1 tbsp olive oil
    • 1 tbsp apple cider vinegar
    • 1 tbsp pure maple syrup
    • 1 tbsp whole grain or maple Dijon mustard

    🥗 Optional for Serving:
    • Arugula or baby spinach
    • Goat cheese crumbles or shaved Parmesan
    • Roasted pepitas or chopped pecans for crunch

    Instructions:
    1. Preheat oven to 425°F (218°C).
    2. On a large sheet pan, toss sliced sausage, delicata squash, Brussels sprouts, shallots, and cherry tomatoes with olive oil, salt, and pepper.
    3. Spread everything evenly and roast for 20 minutes.
    4. While it roasts, whisk together the glaze: olive oil, apple cider vinegar, maple syrup, and mustard.
    5. Remove sheet pan from oven, drizzle glaze over the top, and gently toss to coat.
    6. Return to oven and roast for another 10–12 minutes, until caramelized and golden at the edges.
