Soba Noodle Salad Recipe, It’s What I’m Diggin’ – Harvest Peas, Kale, Spinach, Carrots, Basil, More
[Music] here’s an easy way to enjoy those late spring and early summer vegetables this is a very quick salad to put together I’m using buckwheat noodles which I purchased at the Asian market but you can use rice noodles or even your pasta noodles if you like here are the ingredients if you’d like to jot them down they’ll also be below the video if you’d like to print them out and of course as always you can do a screenshot with your mobile device nice and so I’m going to start by getting some of this red roma lettuce from the green stock system um the Roma is quickly bolting um this is my first harvest it will also be my last Harvest because romae does not like that hot temperature and I went over that with you in the lettuce video and I’ll put a link to it below the video if you missed it and then I also want to get some scallions um I like to use the white part and sometimes the green part so I want to make sure I just barely trim off those roots so that I can use the white part and then I also want to grab just a few cilantro leaves and then I have some beautiful basil growing but I have failed to thin the seedlings um when I thin my seedlings my plants grow nice and big and Lush and beautiful but I haven’t had a chance to thin them so this is the perfect time I’ll just use some baby basil in here and then of course some baby spinach the spinach is looking good down here at the bottom of the green stock system it’s received a a little bit of shade from the plants which are above and I also have some Swiss chard growing so I’ll grab a few leaves of the Baby Swiss chard and then just to add a pop of color I’ll use a few of these nestan flowers as well now we’ll head down to the main garden and I want to see what I can find down here to put into the salad and some kale looks pretty good so I want to grab a few leaves of the kale and then I have some garlic chives and then of course my favorite and the star of the salad is going to be these wonderful sugar snap peas so this is my first harvest of the season and I want to go ahead and grab a good handful of these because I like them to be nice and crisp in this salad so these are my favorite videos to do they’re also my most challenging so I hope you enjoy watching this as much as I do putting it together for you and most of all I hope it gives you some ideas of ways that you can use vegetables that are growing in your garden and so I also want to grab some of these baby carrots um I fa to thin out this bed of carrots so by pulling these baby carrots it will allow the rest of the carrots to mature to a nice full size and so I’ll go ahead and get the tops off so I can take them up to my kitchen and then I noticed I had some really nice squash flowers over here and into the kitchen I want to give everything a good wash I went ahead and remove removed the ribs from the kale and the Swiss chard the spinach though it was nice and tender still the stems had not really thickened up and they didn’t seem to be tough so I’ll just keep those on there and I trimmed my sugar snap peas I went ahead and I did a video on that for you a couple of years ago to show you how to trim them and then I gave my carrots a good wash so now we can get started I have my scallion chives and derss along with some of the red remain Le I have my soba buckwheat noodles a mandarin orange and then I have my trimmed leaves and peas along with the carrots and the baby basil I’m also going to add a baby cucumber and of course we need some salad dressing and so I like to make this dressing ahead of time I try to keep it in my refrigerator it’s really simple and here are the ingredients if you want to make some of course you can always just buy some if you want to to keep it simple I basically just put all of the ingredients in here and gave it good blend now this is one of those high powered blenders so it takes care of that Ginger real um well and it pays it down but if you have just a regular blender that you’re using you may want to grate it first uh so that your blender can handle it pretty good and puree it down into your salad dressing because you know that Ginger can tend to be a little tough and so the other ingredients I just went ahead and T my cucumber and I use my little Julian vegetable pillar to cut it into little strands and I chopped up my scallions real good white and most of the green part and then I just chopped my baby carrots and then of course I chopped up my garlic chives as well so I brought a saucepan of water with some salt in it to a boil and I went ahead I put in my soba noodles and these noodles cook very fast if you overcook them they’ll be soggy and mushy so I have to be very careful here after about 1 minute I went ahead I added my carrots I also added my peas whichever noodles you choose to use just follow your package instructions I actually went a little bit shy on my cooking time with these soba noodles because I’m also going to cool them down and eat them cold so I went ahead and add in my greens at this point I have been cooking it about 4 minutes I went ahead and gave my noodle a taste just to make sure it wasn’t getting too overdone it needed just about in one more minute and after it cooked I drained off the hot water and I plunged it into an ice bath in a collander and I tossed it around to stop the cooking process and this way my noodles would not be soggy or mushy so now the second most important part is to make sure these are drained and dried well because we want our dressing to adhere to our vegetables and our noodles so I tossed them real well in the colander and then I also tossed them gently in a paper towel just to remove any excess moisture and into the bowl we go and now we can dress it and finish it off off so I added my garlic chives and my cucumber strands along with the baby spinach and we’ll put a little bit of dressing right there on the spinach so that it will help wil those leaves a little bit give it a good toss I went ahead and tasted it just to make sure it was dressed good and it was perfect so I tore up a few of those romae lettuce leaves and then I went ahead and put my noodles right there on top and then drizzled it with some of the Mandarin orange juice you could also use lime I just didn’t have happen to have one at the time and I really did like how the Mandarin orange juice worked out I added my scallions and then my baby basil and then of course it wouldn’t be complete without the nestan petals to give it a little pop of color and the first thing I ate was a crispy pee and you might notice that I missed the Squash Blossom in here I had some errands to do before I was able to throw the salad together and it wilted on me which always happens very quickly with your Squash Blossom so FYI keep that in mind so I didn’t use the squash blossome but I might in an upcoming video and there you go it’s delicious it’s light it’s refreshing and it’s just the
