    this is the soup to make if you want something high protein nourishing and I believe child-friendly as I can usually get something with tomatoes pasta and meatballs over the line with my kids you can make your own meatballs or just use storeboard and I love that a big pot of this can be made have it as a meal and the rest can go in the freezer for another time

    🍽️ Serves 4 (generous portions)

    🧾 Ingredients:

    Soup Base:

    2 tbsp extra virgin olive oil

    1 large onion (diced)

    1 celery stick (diced)

    2 carrots (diced)

    1 zucchini (diced)

    4 garlic cloves (minced)

    1 tbsp dried herbs (rosemary, thyme, or Italian blend)

    400g crushed tomatoes (canned)

    400g tomato passata

    1L salt-reduced chicken stock

    1/2 cup small pasta (macaroni/orzo)

    1 cup chopped fresh parsley

    Meatballs (or use store-bought 500g meatballs):

    500g lean beef or pork mince

    1 egg

    2 slices bread (soaked, then squeezed dry)

    1 tbsp crushed garlic

    2 tsp dried herbs

    1/3 cup chopped parsley or mint

    Salt & pepper to taste

    To serve:

    Ciabatta bread

    Grated Parmesan

    Mixed dried herbs

    Extra salt to taste

    🍳 Method:

    1. (If making homemade meatballs) Mix mince, egg, soaked bread, garlic, herbs, parsley, salt & pepper. Form into small meatballs.

    2. Dice all veggies, finely chop parsley.

    3. In a large pot, heat olive oil and sauté onion, celery, and carrot for 8 mins.

    4. Add garlic, herbs, and optional chili flakes. Cook 2 mins more.

    5. Add crushed tomatoes, passata, chicken stock & 1 cup water. Bring to boil.

    6. Add zucchini & pasta. Simmer & stir occasionally.

    7. Drop meatballs directly into the soup. Simmer ~10 mins until fully cooked.

    8. Stir in fresh parsley. Season with salt & pepper.

    9. To make Ciabatta Toasts: Drizzle slices with olive oil, Parmesan, herbs & salt. Bake at 200°C for 10–15 mins.

    10. Serve soup hot with Parmesan & crunchy bread. Enjoy!

    💡 Recipe Tips:

    Add extra veg like green beans, kale, or spinach.

    Toss in cannellini beans for even more plant protein.

    Use store-bought meatballs if you’re short on time!
