Chop the walnuts into equal sizes . Chill in the refrigerator Now let’s make the dough! Combine the cake flour, almond poodle, spice mix, and baking powder and sift them all at once. This time, I used pastry spices from Tomizawa Shoten. That’s right♪ Add sugar and salt to the bowl containing the flour, and mix roughly with a card.By using cane sugar instead of granulated sugar, you’ll get a rich finish. Chop the butter finely in the bowl. By chopping the butter in the bowl, the flour will get in between and prevent the butter from sticking together . Mix together by smashing the butter with your fingertips until the butter becomes finer . The key is to work quickly so that the butter doesn’t melt. Add the whole egg and milk that you mixed in advance . You can mix it ◎ At the end, press occasionally to make the powder and water stick to each other while mixing . On top of that, add some pre-roasted nuts and a fruit mix pickled in Western liquor. This fruit mix contains oranges, raisins, apples, and cherry pineapples . You can do it♪ Once the ingredients are on top, cut the batter in half with a card, layer it on top of the dough, and press down on top. Repeat this several times to spread the ingredients evenly. It may be difficult , but if you use dusting flour as you work, it will come together relatively quickly. Be careful not to use too much dusting flour . Use a rolling pin to adjust the thickness and shape it into a 14 cm square shape. Be careful to make the thickness uniform as you work . Let it cool. At this point, the dough will be quite soft, so Handle with care so as not to break or distort the shape. Once the dough has cooled down, cut it with a knife . Since there are nuts and fruits inside, I think you can cut it cleanly by dropping the blade from the top to the bottom rather than chopping it slowly . Arrange them on top. Before baking, lightly coat the surface with an egg. By doing this, it will be fragrantly browned and look delicious ♪ Now let’s bake in the oven! It’s baked~♪ The kitchen is filled with the scent of spices♡ While the scones are cooling down, we’ll prepare the decorations . Do not add all the water until the end, leave a little and make fine adjustments while checking the hardness . Once the scones have cooled down, decorate them . Slowly pour the icing over them and before they dry, add chopped pistachios and dry raspberries on top . If the icing dries, the pistachios and raspberries won’t get on, so it’s important to put them on right away before they dry .
