The ingredients are very simple and easy to make, but with a little ingenuity, a simple vegetable soup can be very tasty. It is very easy to make. I hope you’ll have a great time. Cabbage, onions, carrots, small tomatoes, bacon, granulated consommé, miso, olive oil, salt, black pepper, water, and this time I will use these ingredients. This time, four kinds of vegetables are used: cabbage, onions, carrots, and small tomatoes, but you can add broccoli or any other vegetables of your choice.
I use thick slices of bacon, but you can substitute sliced bacon or sausage. The secret ingredient this time is miso. The base is granulated consommé, but adding a little miso to it gives it a richness that makes it a very tasty soup. I will make it with these ingredients right away.
Easy recipes at home The first step is to cut all the vegetables. First I cut up the cabbage first. You can cut it any way you like. This time I will cut it into chunks. I will cut like this, turn around and cut into 1-2 cm widths. The cabbage is now ok.
Next, carrots. The carrots are cut off at first. Peel the carrots. If you prefer them with the skin on, you can use them with the skin on. Carrots are diced. First, I stand the carrots up and cut them into 1 cm widths. Be careful not to injure your hands.
Then I will now cut it vertically into another 1 cm width. Roughly divided into three equal parts. Now I rotate it around and cut it into 1 cm widths. Dice the carrots like this. Next, onions. Onions are also diced. First, the hefty part and the beard.
Cut off both tips and peel off the skin. This is the hefty part. With the hefty part on the other side, first cut along the fiber into 1 cm widths. Leave the hefty part attached at this point. Then, when you put it in vertically like this, turn it around and make two slits.
So that it is roughly 1 cm wide. Like this. Now going to cut it into 1 cm widths like this to break up the fibers. The remaining stems are cut vertically into 1 cm pieces, with the stems facing the opposite direction. Turn around again and make another 1cm-wide cut.
The remaining part is cut off with a thump, and only the stem is removed at the end. Dice the onions. Next is the bacon. First, cut the bacon into 1 cm pieces. Then cut it again into 1 cm widths. Then I turn it around and cut it into 1 cm widths.
This is ok. Next, mini-tomatoes. Remove only the stems of the small tomatoes, as they are put in whole. This is ok. The ingredients are ready like this. Now I will make the soup.
I think there are many ways to make vegetable soup without frying the vegetables, but it is better to fry the vegetables once because they taste sweeter and more delicious. Now, first of all, olive oil. Then we fry the bacon first.
I want to get the umami out of the bacon oil, and then I want to let the umami of the bacon soak into the vegetables while frying the vegetables. Now I will put it on the fire with this. I’ll do the bacon first on medium heat for roughly a minute or so.
Going to fry it. The bacon grease will be very splashing at this point, so be careful not to burn yourself. The bacon is starting to brown a little. Then I’ll add the vegetables. Onions and carrots. First, these two are quickly sauteed. Add a pinch of salt here.
This will help the vegetables to absorb a little bit of the umami flavor by releasing a little bit of the water. After a quick turn of the oil, add the cabbage here. Stir-fry. Add cabbage and stir-fry for 1 minute and when slightly wilted, add water.
Now I also add granulated consommé, a pinch of salt, and pepper here. Now let’s mix it. Then cover and cook slowly over low heat for 15 minutes. This will allow the vegetables to cook slowly and bring out the sweetness of the vegetables. The heat is about this low. 15 minutes have passed.
Then I open the lid. Vegetables are now soft like this. Now I can add the small tomatoes that were left over at the end. Add as many mini-tomatoes as you like. I’ll put in about 5 this time. Then I’ll keep it warm like this for about a minute.
After 1 minute, turn off the heat. Now ready to add the secret ingredient, miso, at the end. If miso is added from the beginning, the flavor will be lost, so add it at the end of the market. Dissolve miso in soup in a ladle before adding. This miso and consommé go great together.
