Herb Crust Salmon with Quinoa, Butternut Squash, and Zucchini

Atlantic Salmon one fillet
Minced garlic one clove
Dried thyme leaves one tbsp
Dried dill leaves one tbsp
Lemon zest two tbsp
Kosher salt half a tsp
Black pepper one tsp
Olive oil one tbsp
Copped Zucchini half a cup
Chopped Butternut squash
half a cup
Quinoa ‌ half a cup

Preheat the oven to 350 degrees.
Combine dill, garlic, thyme, lemon zest, salt, pepper and olive oil to make a paste.
Place fish skin side down on a nonstick baking sheet.
Spread herb mixture over fish.
bake for twenty minutes.

on a skillet, cook chopped zucchini, butternut squash, and quinoa with a dollop of butter salt and pepper as needed for about fifteen minues
