      I’m probably as old as the owner is and I’m amazed at how similar his business is with my grandfather also in the food service industry though he provided clean linens and uniforms for restaurants as well as residential services. Now one notable thing here are the fans hung from the ceiling in the dining area where he’s putting trays of food to cool down. Step into any old world style restaurant and most likely they have the same fans. I’m a retired chef and cooling food down rapidly often was necessary to proceed to the next step
      The fans also helped age cheeses and meats faster by circulating the air around the food
      Convection is better than conventional oven
