Ingredients:
– 1 onion
– 200g mushrooms
– 450g chicken breast ( paneer can be used as a substitute)
– 1 capsicum (you can mix different colored bell peppers too)
– Some broccoli (I kept it simple, but feel free to add your favorite veggies for extra healthiness!)
– Spring onion
For the spices, I used:
– Salt
– Pepper
– 1 tsp red chili flakes
– 1/2 tbsp garlic powder (or 3-4 fresh garlic cloves)
– 1 tsp oregano
– Dried basil
Instructions:
1. Heat 1 tsp of oil in a pan. Once hot, add the onion and sauté until golden brown. If you’re using fresh garlic, add it at this stage.
2. Next, add mushrooms, chicken, broccoli, and all the spices and herbs. Cover and cook on low heat for 10 minutes.(You can add paneer too instead of chicken,in that case there is no need to cover and cook, you have to just sauté it)
3. Remove the lid and roast the chicken until all the liquid from the chicken evaporates, which should take about 5-10 minutes.
4. Finally, garnish with chopped spring onions and your dish is ready to serve!
