    1. *2c chopped potatoes (about 4 potatoes)
      *3TBS butter OR 1TBS oil

      *8 extra-large eggs OR use 9 eggs if your eggs are on the smaller size
      *15 ounces ricotta cheese
      *12 ounces Gruyère
      *5TBS melted butter
      *1/2tsp Kosher salt
      *1/2tsp ground pepper
      *3/4c chopped fresh basil
      *3/4tsp baking powder
      *1/3c flour

      -fry chopped potatoes in either butter or oil, stirring often until cooked through
      -mix eggs, ricotta cheese, Gruyère & melted butter
      -add salt, pepper & mix
      -add chopped fresh basil & mix
      -add baking powder & mix
      -add flour & mix
      -spread cooked potatoes evenly into pan (any size pan will work – the smaller the pan the thicker the frittata & vice versa) a 13×9 pan is used in the vid
      -pour egg mixture over potatoes
      *bake 350 for 50 minutes- 1 hour until toothpick comes out clean
