My eldest daughter is treasure number 1, my second son is treasure number 2, and my youngest daughter is treasure number 3. Today is the day my two oldest children, who are in puberty, play with the family!! Even though the zoo might be boring now, my youngest said he wanted to go to the zoo, so I happily followed him. After a long time, I rode the slide and carried my younger sibling on my back and looked forward to the dolphin show… but for animal welfare and ecosystem preservation, the performance hall was empty XD Instead, I enjoyed the pretty autumn leaves to my heart’s content. (It’s less tiring if we go like this, relying on each other 🤣) There’s an episode at the end of the video that happened while picking persimmons from a persimmon tree, so please watch until the end❤️ When we returned from Taiwan, we were going to live with my mother-in-law who lives alone. (1) Salmon Open Sandwich) 10 years ago, when we lived in Korea and my two older children were young, I was close to my mother-in-law. I tried to live with her but gave up. The reason is… I came back to Korea this time and confirmed again that our lifestyles are so different. (Second one who helps me study~ Sweet guy!!) Especially because of our eating habits that we can’t compromise on…😅 Enjoying open sandwiches on homemade fermented bread… – Salmon open sandwich and cabbage salad – Fermented bread: Please refer to the previous video through the link / Sandwich ingredients: Smoked salmon, ham, avocado, Havarti cheese, scrambled eggs / Cabbage salad ingredients: Cabbage, carrots, onions pickled in salt / Salad seasoning: Plain yogurt, mayonnaise, lemon, whole mustard, sugar. It’s kimchi-making season these days, but how many housewives make kimchi at home? Of course, I’ll make a bag of cabbage, but as far as I know, there aren’t any young housewives around me who make kimchi ㅡㅡ; However, it’s hard to find a housewife who doesn’t make sandwiches or salad at home~(As times change, eating habits change…) Today, let’s talk about our changing eating habits while introducing 6 simple but delicious home brunch menus. Our mealtimes are always bustling, not a quiet and elegant home brunch… My older sister and brother are playing board games to teach the youngest math. If you open the refrigerators of people who cook a lot these days, you will feel that times have changed. (2) Chicken Sandwich) My mother-in-law was also surprised when she saw our refrigerator… Seasonings in the refrigerators of people in their 60s and 70s: Red pepper powder, red pepper paste, soybean paste, plum, salted seafood, etc., Seasonings that can’t be left out of the refrigerators of people in their 30s and 40s… It’s a mess because we’re getting ready to move soon… Would you please take a look at my refrigerator? ^^; My beloved Taiwanese ‘pidan’ (fermented duck egg). Inside there are shrimp paste, gochujang, doenjang, homemade jams… whole grain mustard, sriracha sauce, chili sauce, oyster sauce, chicken stock, lemon juice, Greek yogurt, various cheeses and herbs, ketchup and mayonnaise of course…ㅋㅋeven mala sauce ^^; I’m making sandwich sauce right now… (1T honey, 3T mayonnaise, 1T lemon) (This is totally delicious. You can substitute yogurt for mayonnaise.) Anyway, there are so many things you need to have other than the existing traditional seasonings~ And, low-carb, high-fat diet, ketogenic diet, fasting, etc. that have become popular in the past few years… Our dining table is changing like a storm thanks to a lot of information. In particular, among middle-aged people suffering from adult diseases, I met someone who doesn’t eat rice at home a while ago~ 300g chicken breast, 1T starch powder, 1T glutinous rice powder, 1T domestic wheat, a little water, 1 egg, mix well. I was honestly surprised to hear that someone doesn’t eat rice at home ^^ As those who watch our channel know, I usually eat a lot of vegetables. Especially when I eat flour food, I increase the proportion of vegetables to help my metabolism. Fry the chicken breast until golden brown. There is a saying that you live by the power of rice, but these days, everyone is making a fuss to give me just a little bit of rice ~~ㅎㅎ Actually, I can’t imagine living without eating rice. I eat bread about once a week. Today, I’m sharing a bread recipe that I’ve been enjoying for a while~^^ Spread the mustard sauce I made on whole wheat bread, then top it with Havarti cheese, pickled onions, tomatoes, fried eggs, and chicken breast. Done~ I wanted to put more vegetables between the bread, but it was too inconvenient to eat, so I prepared a cabbage salad separately. Eating like this makes me feel more full than I thought, and I didn’t even think about snacking until dinner~ I used to think I only bought sandwiches, but if you make it, you can make them much more delicious than eating out. My mother-in-law never touches this sandwich… but the kids eat it so well. The salad that took the place of kimchi… I cut mine down the middle. Doesn’t it look so much more delicious when you can see the inside at a glance? Today, I’m eating it with ‘Alishan tea’ that I brought from Taiwan. I was able to enjoy a sandwich that costs at least 6,000-7,000 won outside, but in a healthier and more filling way. You guys should definitely make this too❤️ 3) Potato Sandwich on Morning Bread When I was little, there were only two options for eating potatoes: dipping them in sugar or dipping them in salt~ I always keep potatoes in my fridge. Since I learned what a good ingredient potatoes are, I’ve been eating them in a variety of ways. I eat them instead of rice in the morning, I make soup with them, and I make a salad like this, which makes a great side dish, but putting them on cute morning bread~ It’s perfect for capturing kids’ hearts!! – Morning Bread Potato Sandwich – 4-5 potatoes, 1/2 lightly cooked carrot, 1/4 pickled onion, 2T mayonnaise, 1T plain yogurt, 2T milk, dried parsley and a little pepper, salt to taste. If you have pickles at home, chop them up and add them. It makes it much more flavorful. Kids also like corn~ These cute little guys are the key! ㅎ Come to think of it, I thought I was lacking protein, so I boiled the chicken breast that I had marinated. And my beloved cabbage salad~ Today, I’m going to squeeze out some moisture with my son’s help ㅋㅋ (Thanks son) You can just use morning bread, but if you lightly toast it, the outside will be firmer. My kids kept singing, “Are you only eating morning bread on airplanes?” and asking me to make it at home too. Since I don’t plan on flying for a while, I granted their wish today~~ As for the cabbage salad, as usual~ Now I’m setting up~ I cut the bread with a fork… and the crumbs fell off, so I took out the bread knife. 🤣 It’s not a bread knife for nothing~ I didn’t put any mulberry jam on the first one~ The unsweetened one is mine! It cuts smoothly ㅎㅎ The mulberries that came out briefly in the spring and then passed away, are made into jam, so you can enjoy them for a long time. The subtle sweetness and the fragrant aroma of the berries go together, making the sandwiches even more delicious 😋 I like eating sandwiches, but I like making them, so my kids keep nagging me to make them and sell them ㅋㅋ Is business really that easy~ My parents ran a restaurant for 50 years, and it’s not that hard ㅠㅠ You have to mobilize the whole family. So I told them to wake up~ That if mom runs a business, she won’t be able to make you guys delicious food ㅋㅋ Isn’t it cute when you line up the sandwiches like this~😍 Cut the chicken breast into bite-size pieces~ What’s the point of being cute~ They’ll gobble them up in no time ㅋㅋ To stabilize blood sugar, they tell us to eat carbohydrates last and vegetables first, so I’ve been trying to do that since last year. But they look so delicious, I can’t help but take a bite~ ^^ My youngest is increasingly conscious of the camera! I wake up my body with short, sharp movements and start my day. The sunlight is so bright on the way back . 4) Korean toast. Do you like sandwiches or warm toast? – Korean toast (5 pieces) – 2 large cabbage leaves, 1 onion, 1/4 carrot, 5 eggs, 10 slices of ham, 5 slices of cheese, 10 slices of bread, butter and oil. A friend of mine from Taiwan came to visit me recently, and he said he really wanted to eat Korean X-sack toast~ (Chop all the vegetables into small pieces) Actually, I think the toast I used to eat at street food stalls when I was a virgin was tastier. Especially on a chilly day like this, I can’t forget the taste of eating warm toast while stamping my feet. ^^ If sandwiches have the texture of fresh vegetables and a lighter taste because the bread isn’t toasted in oil, toast is made by toasting bread in butter until golden brown and then spreading ketchup and mayonnaise generously for a more stimulating taste. Street toast is even sprinkled with white sugar on top of that~ Of course, I like toast better, but my body, which is approaching 50, now prefers healthy sandwiches. ㅎㅎ That means kids like toast more~ First of all, the smell of bread toasting with butter is tempting for kids ^^ It tastes best when eaten warm, so I feed it to the kids first~ My mom bought me this rye bread, saying it was delicious. It’s so big that I could fill up on just one. At home, I wrap it in a wrap like this and it doesn’t drip, so I can eat it cleanly. Today, with hand-drip coffee☕️, let’s go back to those moments when we were eating at street food stalls. ㅎㅎ 5) Truffle Myeongran Pasta. Pasta that has taken the place of jajangmyeon at some point!! My mother-in-law can’t even eat jajangmyeon because it’s too oily. She’s from the generation that thinks janchi noodles, plain noodles rolled in a clear anchovy broth, are the best. However, after janchi noodles and jajangmyeon, the menu that many people under 50 eat on special days is ‘Pa!s!ta!’ For a long time, when I want to have a quiet chat with friends, I usually meet them at a pasta restaurant. – Truffle Myeongran Pasta (4-5 servings) – 1 pack oyster mushrooms, 1 pack oyster mushrooms, 2 onions, frozen broccoli (optional), 5-6 garlic cloves, 150g salted pollack roe, 400g pasta noodles. The key to myeongran pasta is delicious salted pollack roe. Peel the thin layer of pollack roe and dissolve it in water. I’ve had cod roe pasta a few times for my kids’ birthdays, and these days, there are so many great recipes out there that I’ve even started making it at home. I’m going to roast half the king oyster mushrooms and use them as a topping, and sauté the other half with oyster mushrooms. Mushrooms are one of my favorite ingredients. They’re affordable, and when cooked well, they can even bring out the texture of meat. Now, I’ll add garlic to the oil and sauté them. The first time I had cod roe pasta, I was skeptical. I had a feeling they wouldn’t have cod roe in the West. So I searched online, and sure enough, cod roe pasta has become a trend in Japan (plus some broccoli from the freezer). Pasta doesn’t seem to be a Western dish anymore… There’s perilla leaf pasta, water parsley pasta, and more… Pasta has become Korea’s national noodle dish. Haha. Once the vegetables and noodles are sautéed, I add cod roe to adjust the consistency and saltiness. I adjust the consistency by adding noodle water, and since cod roe is salty, I add salt at the end if it’s too bland! Even without butter, cream, or store-bought sauce, you can quickly make this with ingredients you have at home. (If it feels like it’s missing something, add 3T of chicken stock.) There’s store-bought cod roe pasta sauce, but making it yourself will reduce the amount of additives. Top it with pre-roasted oyster mushrooms . Add parsley, pepper, and crushed red pepper to taste. It’ll be even more delicious if you top it with your favorite cheese. Cod roe pasta, which you could only eat when eating out, can now be enjoyed easily and simply at home . As I was eating, I thought it would also be good with chicken breast. It’s become a habit to not take off my apron until the meal is ready. (You worked hard today❤️) 6) Costco Oven Roasted Chicken Legs. Honestly, even if I lived with my mother, our eating habits are so different that I thought it would be difficult. Meal times are different, and what we eat has also changed a lot. I think this difference in eating habits by age creates a generational gap. Sharing life requires table fellowship… but aren’t the opportunities to share meals together decreasing as our tastes change? – Costco Oven Roasted Chicken Legs (10 pieces) – Season the chicken legs with salt. Simmer with 1 onion, 5-6 whole garlic cloves, 2 ginger cloves, soy sauce, 1 tablespoon whole-grain mustard, and cooking wine. Rotate the chicken legs occasionally to ensure even distribution of the seasoning. It’s delicious even if you don’t oven-roast it. When I was in Taiwan, I went to Costco every two months to buy necessities, but in Korea, with Coupang, I don’t need to go to Costco. And it’s convenient to be able to find high-quality ingredients online, rather than at Costco. I top my online salad greens with steamed sweet pumpkin and enjoy the end of autumn. Salad Vegetables 1kg – 8,900 won, Chicken Breast 2kg – 21,500 won. Right now, my kids think mom’s cooking is the best, but as time goes by, even their tastes will change. Generational differences can be natural. I think the important thing is to accept, understand, and communicate with each other’s differences. We can’t stop the passage of time and the changing cultures, but if that person is important to me… Is there any other way than to communicate with constant interest and love? A magpie had pecked at a few persimmons left at the top… If they got hurt, the hospital bills would be even higher… My husband and kids decided to pick them. I thought they’d give up, but I remembered picking persimmons from the tree in the yard with my father when I was young, and I gave them some advice… and they finally succeeded! My husband who ended up picking all the persimmons, leaving two behind… Clap clap clap👏 There were some dangerous moments, but we successfully harvested the persimmons! The excited kids happily ate the delicious persimmons XD
