Spring is in full swing with this pasta dish with hearty kale, zesty capers, and creamy burrata! 🌼
Ingredients (serves 4):
320g Barilla Collezione Trigatelli
4 tbsp extra virgin olive oil
4 garlic cloves, finely chopped
250g kale, roughly chopped
4 tbsp capers, drained
2 lemons, zest grated
sea salt and freshly ground black pepper
2 burrata, drained and halved
Method:
1. Bring a pot of salted water to a boil and cook the trigatelli according to package instructions.
2. Drain and reserve 150ml of the cooking water.
3. Meanwhile, heat a skillet until hot, add the extra virgin olive oil and garlic and sauté for 1 minute until just golden.
4. Stir in the kale, cover with a lid and steam for 3-4 minutes until wilted.
5. Stir in ¾ of the capers and the lemon zest and season with salt and black pepper.
6. Add the trigatelli and toss until coated, adding the pasta water little by little and cook for 1 minute to get a creamy sauce.
7. Season with salt and black pepper and serve topped with the burrata, last of the capers and lemon zest and a drizzle of extra virgin olive oil.
8. Serve and enjoy!
