Cozy Beef Soup for cold winter days 🍲| Crocheting like a granny & Leek Pie

    Hello everyone ♥️♥️ I woke up feeling very relaxed today And I want to make an easy 10-minute breakfast Cut two green onions to start And a single strip of bacon in small pieces so it feels like it’s more 😅 Yep, that’s it I’m starting by stir-frying the bacon I’m being more aggressive than necessary Oblivious to all this bacon escaping, I continue with the green onions Make two nests 🪺 My energy levels are really high for a morning, I already broke a yolk Oh, now you’re being gentle There’s a thing that I’ve heard of but don’t know the meaning of It’s called “patience”? Like what is it?! Never had it Let’s be productive till the bread is toasted With 2 tbsp of mayonnaise and half a tsp of garlic sriracha, I’ll make a sauce Now that I think of it, this sauce will go so well with the eggs Spreading a generous amount of it on each slice Never forgetting about my cheese, in my next life I could be a little mouse The hot egg will melt the cheese very nicely (stomach rumbles) Add salt and cayenne pepper Who thinks of tools, when you have hands hehe Before exiting the kitchen, I’ll pour us some kefir milk I prefer the berry flavored, but we only have the plain one today We eat this breakfast a lot (Mr. P and I) So I’m fully aware of what to expect I do it whenever I feel lazy, but also fancy haha Wetting my throat with the delicious kefir I would say it is an acquired taste, but resembles a liquid yogurt Trying to make my last bite last a bit longer The combination of green onion, bacon, and egg, could never lose I feel well nourished and awake now Finishing off my drink and I’ll slowly get ready to go buy some groceries In my bathroom window, a little stalker is half asleep Little Lady already had a breakfast but seems like she needed more Oh, she moved, time to make a sleek exit 😮‍💨 As soon as we walked into the mart, a Christmas collection startled us Okay, if you insist, I’ll buy some Christmas cookies from you (it’s November) After taking the cookies, getting some berries too, to even this out We like eating one kiwi a day so we’re getting them Ooh ooh buying some gold ones too (my favorite type) Buying some unknown cheese We tried getting Metsovone cheese, but it had a short expiration date There was a small fridge, full of holiday-themed cheeses It seems that they were wax-sealed? I’ve never seen anything like that before This fondue cheese caught my eye, but it’s pretty expensive 👩🏼: Should we leave it, and come to get it for Christmas?
    🧑🏻‍🦱: No, no get it now (Mr. P, who never denies me anything) I’ve heard about this cheese! I need to get it This grocery shopping has suddenly turned into a cheese shopping spree Don’t worry we won’t eat them at once Thinking of getting this seemingly good quality parmesan cheese But it costs 17 euros? It’s been nice knowing you for a second It seems like Christmas has arrived since November this year I’ll happily partake in a small way hehe This Nutcracker already looks tired, hang in there little guy Never skipping on a Wasa crispbread Brioche bread? Count me in Contemplating on getting this delish Greek chocolate, but I talk myself out of it I’ve ran out of vanilla syrup, a must for holiday season An interesting item caught my eye A Kozani saffron tea, so interesting Red lentils that look yummy And a Greek truffle risotto? Oh yeah Basil pesto to have on hand And shell-shaped pasta that I’ve missed lately I’m in need of a cake pan, could I also make bread in this one? I’ll take it I stumbled upon this very, very interesting new product This is a drinkable meal! 🧑🏻‍🦱: It’s for people that can’t gain weight This is a very innovative product Getting some Greek yogurt And cranberries covered in dark chocolate 🤤 We found this Mykonian anthotyro cheese Our groceries consisted of 50% cheese, I would say it was a successful trip hehe I’ll quickly put them away now I’m not sure what I’ll make with this, but I think it will be awesome for French toast Of course kefir milk This tea contains saffron, so it will be very tasty My prized possessions 🧀 I’m happy to have melomakarona (Christmas cookies) at home this early Day 2 Guys yesterday, I abruptly clocked out of filming So let’s pick up the camera again today You guys are worried about what will happen to our cats when we move This is my in-laws’ house, so they’ll continue living here They’ll take care of them really well (already do), but they might get a little fatter haha Today is a bit cloudy, but the temperature is pleasant Some extra cat cuddles are mandatory today My male cat always tries to be extra cute and I love it (But I know better than to try to pet him now) The roses in the garden slowly flourishing I always forget that they pop up while winter starts In all the years I’m cooking, I’ve never made beef soup It sounds very strange, even to me But Mr. P doesn’t really like it, so I never went into that hassle hihi But yesterday the idea of making this soup seemed appealing Of course, I’ll try to make it according to our own taste This won’t be the “by the book” traditional recipe I’ll only add 2 medium-sized potatoes,
    since they were the only two good ones left in my pantry So far, I’ve prepared 2 leeks, 1 onion, 1 celery, 2 potatoes, and 5 carrots (Try and find which is my favorite vegetable hehe) I’ll round the edges of the big carrot pieces I want them to look more inviting somehow hehe Once you get into the zone, it becomes fun to prepare this I’ll finely chop the discarded pieces, I don’t want to waste anything Chop, chop, chop First I’ll start off by patting dry the beef chunks I told my butcher to cut them fairly thin Salt your meat from high, to cover more surface And then a thin coat of flour Give this an aggressive massage and it’s done I preheated some olive oil in a pot And I’ll let the meat sear very well on each side Only when a nice crust is developed, you’ll flip it (I’m watching you!) Just searing two sides is fine, no need to go all around I’ve put 1 kg of beef, in two batches This will ensure the temperature won’t drop, and it won’t steam I also asked the butcher for a tender piece, that doesn’t have a strong odor In the same pan, I’ll stir-fry the prepared veggies I don’t know why, but whenever I make soup, it feels magical I can tell by stir-frying the veggies, that they have the purpose of being in a soup haha It looks different than stir-frying them for a sauce etc. Ok my rumbling stops now! I added a heaping tbsp of tomato paste too, to influence the color a little bit Then it’s time for the meat to go back in Everybody please get familiar with each other I’m now adding boiling water to cover This soup amount is acceptable & chicken stock cube (or beef if you have it) Lastly, I’ll add a bay leaf and let these cook for 2 hours or until the beef is tender Turns out, I shouldn’t have added the potatoes from the start Because they’re falling apart I’ll fish them out with a bit of soup, so it won’t turn dark,
    and I’ll put them back inside near the end I wanted to stir-fry them so that’s why I added them from the start Feel free to put them in about 30 minutes before the end It was only 2 medium potatoes, why does it feel like there are endless pieces? Pheww, finally done Add more water, to replenish the soup,
    that reminded me that I need to drink more water too (Drinking right now) A soup that takes 2 hours to cook seemed a bit lacking to my eyes I had a saved bread recipe in my archives, since forever It looks suspiciously easy, but I’ll try it Add 3 and 1/4 cups of self-rising flour, 475g Greek yogurt, salt, and stir This is it! Does it seem suspicious to you too? It needs some elbow power to knead this through I also added a little bit of olive oil, to make it easier for me This is a really heavy dough but otherwise, it looks fine Transfer it to a lined baking pan I’ll lightly beat an egg (Beating it directly into the measuring cup) Brush it gently all over, so it gets a nice color Sprinkle some seeds on top if you like I added sesame, pumpkin, and black sesame seeds Bake it at 170°C, for 45 minutes or until cooked through Suddenly I felt another presence Do you guys remember her? She is Little Lady’s mum! We used to take care of her, but she suddenly stopped coming There’s a cat heaven house in our neighborhood that feeds all the cats I’m grateful, but also jealous, I want them all for myself haha (My male cat would disown me if he heard of this haha) The soup needs 30 more minutes to get done So I thought, why not add a few mushrooms in there? I’ll stir-fry them in butter firstly, so they won’t get mushy This soup created minimal dishes to be washed But it seems that I have an agenda against me 😒 Yes, they look perfect now More additions to the soup party I’ll let the soup boil for another 30 minutes It looks so visually pleasing 🤩 Getting somewhat ecstatic, watching the weather turn gloomy while making soup hihi Guys, guys, it’s happening, the soup is almost done I love watching everything I prepare slowly come together The knife comes out clean, so the bread is fully cooked Umm.. why is this bread so heavy? It looks fairly normal though Two-ingredient recipes are my arch-nemesis, they almost always fail me But I’ll never let go of this dream.. so I’ll keep on trying Oh ok, it’s not bad, it’s a bit dense though I like the reddish color of this soup The traditional recipe doesn’t have mushrooms and tomato paste Instead has lemon juice in it (I wanted to add lemon juice here too but I forgot) (I did add in the leftovers at night, and it was delish, please add a few squeezes) Hungry Mr. P, patiently waiting hihi 🧑🏻‍🦱: I’m curious, I’ve never had meat soup like this before 👩🏼: It’s a little different 🧑🏻‍🦱: Mmm it’s so delicious 👩🏼: I made it like that, so you would like it 🧑🏻‍🦱: It’s SO delicious, and I don’t even like beef soup 🧑🏻‍🦱: It really helps that you have seared the beef 🧑🏻‍🦱: And it’s like a stew (not boiled), it’s caramelized It’s so fascinating, how changing up the ingredients just a little Can make any dish taste so differently Trying the bread too 🧑🏻‍🦱: It has the yogurt flavor, just like banana bread 👩🏼: The good thing about it is that it’s done in an hour 🧑🏻‍🦱: This bread goes so well with the soup 👩🏼: This makes me so happy This soup warms me so tenderly 👩🏼: I’ve added leeks, but in large pieces But now it has melted right into the soup 👩🏼: The beef is so soft, I can cut it with the spoon The carrot is also so good like this, as soon as you bite it, it melts into the mouth Mr. P keeps eating the bread haha 👩🏼: This bread is very unique, not for everyone It’s pretty dense, and has a yogurt flavor It would be good if it wasn’t so round, since the outside is the best part I liked this dish so much My stomach is absolutely satisfied hihi I won’t let a drop of this go to waste Day 3 Good morning, mon chéris! This marmalade is in French, so I’m not sure what it has in it hehe You guys had told me in a previous video but I forgot 😅 Anyway, it looks like it would be a great fit for my brioche bread I’ll do a milk toast recipe that is trending lately It’s like French toast, but only with milk, not eggs You can sandwich whatever jam you have on hand inside this And toast both sides evenly in butter Surprisingly, this was done so fast?! Yep, looks good Now add 90ml of milk (I used hazelnut-flavored oat milk) I added 130ml, so I’m spooning out some of this hihi *working hard for my breakfast* Once the milk is soaked into the bread, flip it I want this to have a nice crust on both sides It was so easy to prepare! I’ll quickly do another one The brioche bread smells so sweet Both sides look done I added less milk this time But now it was too little! (90ml is the way to go) Spoon it on the top piece gently This feels so plump I like that it only has milk, since the eggs make me worry With this, I know for a fact that it’s cooked through hehe I’ll decorate it with some raspberries and blueberries And a drizzle of maple syrup A home cafe is open 🥹 Taking the essential instagram pictures hehe This already smells so good with the brioche and jam And it’s honestly delicious 😭 The bread has soaked the milk and it’s like I’ve added cream in here This breakfast is absolutely addicting – proceed with care I like French toast, but I worry if it’s fully cooked, since it’s soaked in eggs and milk But with this, it’s only delicious taste, without any worry And the berries go so well with it Mr. P takes the dishes as soon as I finished haha (he ate his in seconds) I’ll slowly work on my laptop with the sugar rush I got My stomach is full, so my brain works a little slower – oops See you in a little bit Mr. P drove me to a cafe, so we’ll get our morning coffee Another proof that Christmas has come early this year 🤩 Secured the goods, and now, along with my mother-in-law We came to a church that has the icon of The Virgin Mary, Quick to Hear Straight from Mount Athos (an autonomous
    monastic state in Greece, located on the easternmost peninsula of Halkidiki) We went to venerate and pray I’m always mesmerized by the candles (might be a moth in another lifetime) Today is so nice to be outside Besides the church, there’s a small water flow It’s so amazing to see this up close I can’t explain why it’s so mesmerizing to look at water flowing, but it is And the church so close, feels so peaceful We’ll go back home with happy hearts What a peaceful day to be outside, who thought that it would make you feel so good Ahh fresh air through my lungs Day 4 Someone gave my father-in-law a batch of leeks and beets They’re on the brink of death I felt a little overwhelmed for a second, so let’s go see the new lemon tree I see some really small flowers forming there! 🤩 This gave me some strength to tackle this task I’ve been neglecting for a while I grabbed a handful, and I’ll come back for more I cleaned the leeks and the beets! It took me a long time and I edited it out, since I don’t want to see the dirt again Cut them all lengthwise 🔪 Cutting them like this, lets you see if there’s dirt in ther I’m sure I added about ten leeks, at least There’s still more outside, but I did my best 🤧 Leeks are low in calories but rich in nutrients like vitamin A, C and K They also are rich in antioxidants, which protect the heart health When they’re cooked, they turn so deliciously sweet I only add salt and pepper, and they don’t need anything else I’ll add two green onions that I had on hand Leeks and onions are part of the same “family” So both are incredibly tasty and flavorful Now a friendly advice from me to you Don’t wear your freshly washed clothes while making this The smell of onion is very strong 😭 (rip clothes) I’ll let the leeks cool down now, and in the meantime I’ll boil the beets See you in a while guys! For today I’ll make a leek pie and beet salad The leek pie is very easy and so delicious 2 eggs, 200g Greek yogurt, 100ml olive oil Beat them well and add the cooked leeks I’ve let them cool for 10 minutes Then add about 150g of self-rising flour in Stir, and add more flour if it’s needed The batter is thick like this Add a little salt and 400g of crumbled feta cheese *wash hands immediately* Just like that our delicious pie is done Add olive oil and breadcrumbs to a pan And gently add the batter in Spread it even and sprinkle more breadcrumbs Bake at 180°C for 40 minutes or until cooked through The pie only doesn’t fit the standard structure that I have in mind for lunch It feels more like a breakfast to me But since I was thinking of what to make and my mind flooded with ideas Nothing seemed too tempting Then I thought “what would my granny make?” She always does a simple crustless pie and two crispy fried eggs on the side Sometimes along with a tomato and cucumber salad, other times with French fries Since I don’t have tomatoes fit for a salad, I’ll make this beet root yogurt salad to go with Salad dressing: 100g of Greek yogurt, 2 tbsp apple cider vinegar, 2 tbsp olive oil I’m aware of wearing a cream cardigan and I’m about to cut the beets I’ll try to be as careful as possible in cutting the beets into small pieces Easy.. easy.. *bang bang bang bang* All these and no stains on my cardigan (that I know of) I missed the footage of mixing them in the sauce, but you can imagine I’ll add some chopped walnuts in this Some also add finely diced green apples, but I’ve never tried it (Half of the walnuts have flown off) This salad would be good even for the beet haters I think Since the sauce takes some of the earthy flavor away Try it as you go and adjust the flavor as you like I’ll now put it in the fridge, as it’s best when chilled My pie is done and looks cute! I like the type of pies without phyllo on top better I could eat this type of pie any day and it’s easier too But still, I want to make my own phyllo dough
    some day if my future kitchen will allow hehe This pie smells so good, I’m also salivating This meal could use more protein So I’ll fry two eggs yiayia style In plenty of olive oil, I’ll baste the sunny-side-up eggs I fear for the oil splatters but I’m committed now Just use medium heat so it won’t splatter too much The top gets bubbly, so cute My crispy fried grandma eggs are done too I made a platter so we can eat this easily Salt and black pepper on the eggs to finish them off Let’s goo The whole house smells like leek at this point but it’s very appetizing haha 🧑🏻‍🦱: This pie is delicious, it’s indeed perfect 🧑🏻‍🦱: It’s so savory and flavorful He even said it’s better than the zucchini pie?? It’s so strange It’s like my mind kept working on that knowledge in the background The start of the base starts appearing! The case will be a mushroom shape And the pattern is very easy, even for a beginner (with basic skills) Let’s see how this fits This makes me too happy!! I’m doing the chain, that’ll keep it hanging on a bag The base is done (looks weird this far) I’ve read that grandma hobbies, like knitting and crocheting etc. Are very powerful for cognitive health! My friend made Lasagna soup which was so good. Have you done that one before? Taco soup🌮was also popular. If you have never made them, it can be an idea for the future.       Εγω σαν εναλλακτικη για το ανοιγμα φυλλου εχω τις ταρτες. Φτιαχνω την Μπριζέ με ελαιόλαδο της Ντινας Νικολάου. Ευκολη γρηγορη και πετυχαινει παντα. Δεν την προψηνω. Και τη γεμιζω με οτι θα ηθελα να βαλω σε μια πιτα. Γλυκια η αλμυρη. Η αγαπημενή μας γεμιση ειναι κρεμμυδια πρασο φετα και κυμινο.

    7. Δήμητρα, δοκίμασε την επόμενη φορά να βάλεις στην πρασσοπιτα λίγο άνηθο. Την πάει σε άλλο επίπεδο. Επίσης την είχε φτιάξει η μητέρα μου κάποια Χριστούγεννα και είχε προσθέσει μέσα λίγο τηγανισμένο bacon.     15. κ προτιματε τα Ελληνικα προιοντα, γενικοτερα…να υποστηριξουμε κ την πατριδα μας εεε?. κ ειδικα τους μικροτερους. παραγωγους….[εκτος απο το αλατι] αν δεν μπορεις να βρεις πραγματικο θαλλασινο…ΙΜΑΛΑΙΩΝ,,πολυ πιο υγιεινο [τα'χουμε ξαναπει αυτα] πιστεψε με…εχω ασχοληθει με την υγιεινη διατροφη,πολλα χρονια ..!😊
