Today, I’m making dashimaki tamago—Japanese rolled omelette. Crack 4 eggs into a bowl. Add 4 tablespoons of dashi. Half a tablespoon of soy sauce. 1 tablespoon mirin. No sugar here. Mix it well. But don’t overbeat it, okay? Strain the egg mixture. Repeat that 3 times. It makes the eggs really smooth. This little extra step is super important. Alright, turn on the heat. Oil the pan. Pour in a quarter of the egg mixture and spread it out. When it’s about half cooked, roll it towards you. Take a quick breather, then roll it up. Make sure to oil the pan regularly. Oil the far side, move the egg,
then oil the near side. Add another quarter of the egg mixture,
lift the roll to let the egg flow underneath. Pop any bubbles that form. When it’s half cooked again, roll it up.
Repeat. Quick pause, then roll it again. Oil, move the egg, oil again. Pour in a quarter more,
lift and let the egg flow under. The trick is a gentle toss of the pan.
Relax your chopsticks. When it’s half cooked, roll it up. Pause again, then roll it up. Oil, move the egg, oil again. This is the last time! Roll it up and pour the rest of the egg underneath. It’s getting heavier now. A little nervous if I can do this right. Okay, here we go! Phew… Pause again, and this is the final roll! I did it! Place it on a bamboo rolling mat while it’s still hot, roll it up, and leave it for 15 minutes. After 15 minutes, cut it up. The dashi juices are all juicy—just perfect. Do you use high or medium heat? For some reason, the eggs keep sticking to my copper pan when I try to flip them. I think I'm putting enough oil. 🤔
