Finish sauce ①Prepare mushrooms Prepare mushrooms I found a cheap “black abalone mushroom” in a supermarket , so I will make it a dish. Wipe off the dirt on the mushrooms with a kitchen paper. Cut it to a suitable size. You can choose the kind of mushrooms you like, such as king trumpet mushrooms and oyster mushrooms. I want to keep the texture of any mushroom, so I cut it into large pieces. ② Grill olive oil When the frying pan is warm, add mushrooms. Salt a little black pepper Return and little salt and pepper. Let the oil suck while sautéing. Cover and cook the mushrooms. Remove the lid after a while. When the mushrooms are cooked, unsalted butter 10g . Add butter to the whole mushroom. When the butter is charred little by little, put it on a plate. The butter left in the frying pan It will be used as a sauce, so leave it. ⓷ Heat the frying pan to finish the sauce turn off the heat When the butter foams and burns, little Soy sauce immediately and sprinkle it on the mushrooms.     【材料】
    黒アワビ茸
    塩 少々
    コショウ 少々
    オリーブオイル 適量
    無塩バター 10g
    濃口醤油 少々

    【作り方】
    ①キノコを下処理する
    ・キッチンペーパーで表面の汚れを拭き取ります。
    ・適当な大きさにちぎります。大きめにちぎる方が食感が残るのでおすすめです。

    ②焼く
    ・フライパンにオリーブオイルを敷いて、温まったらキノコを入れます。
    ・塩少々、コショウ少々してソテーしながら油を吸わせます。
    ・蓋をしてキノコに火を通します。
    ・火が通ったら火を止めて無塩バターを入れます。
    ・キノコ全体にバターを絡めます。
    ・バターが少し焦げてきたらお皿に盛ります。
    ・フライパンに残っているバターはソースに使うのでそのまま置いておきましょう。

    ③ソースを仕上げる
    ・先ほどのフライパンを火にかけます。
    ・バターが泡立ち、焦げてきたら濃口醤油を入れます。
    ・すぐに火を止めてキノコにかけたら完成です。

    3. Abalone is one food I'm not fond of. In New Zealand our abalone is called paua, pronounced paa-wa. The paua shell is beautiful though, you should have a look on-line 😊

      At first, I thought you were going to cook Abalone, the shelfish. I was a little excited since I have caught many Abalone free diving in California.
      The abalone I caught were Red Abalone, often with a shell up to 25cm wide.
      Very delicious to eat!
      Just the word Abalone brings back many good memories.
