I don't know what that other commenter is on about but this is a real paella, you can't cook all the ingredient together because they don't all have the same cooking duration, this is how normal paella is made and it looks great!
I believe that this is from one of European trips he took. As a person who’s been following Hiro San for many years, this kind of video is a treat in a way that I can experience what he experienced vicariously 👍

this is actually not paella, in paella all ingredients are cooked together! not separate, like you did :))))
