簡単ケール秋の収穫サラダ | Eats With Gasia

Hey guys, today I’m making a fall harvest salad. Such a hearty, delicious salad. Um, it’s super filling and packed with lots of vegetables and so much flavor. So, without further ado, let’s get started. [Music] So, as you can see, I peeled and am now dicing um into cubes a few sweet potatoes. You can also use butternut squash. You can use, you know, any other squash that you may have on hand. Um I’m using sweet potatoes. I’m going to roast these in the oven before adding uh to the salad. I marinate the roasted sweet potatoes with some olive oil and cinnamon. The sweet potatoes will go in the oven for about 30 minutes um at 400° F. [Music] [Music] So, the base of this salad is kale, but you can also use mixed greens, or you can use both kale and mixed greens, whatever you choose. I’m dressing the kale with some olive oil and lemon. As you know, kale tends to have dry texture. So, this will help the kale just get nice and soft before I add the rest of the ingredients. Okay. Next, I’m going to chop this apple into cubes before I add the rest of the ingredients to the salad. [Music] [Music] [Music] So, here are the sweet potatoes. es that I roasted. They were delicious. I mean, like, you cannot skip out on the sweet potatoes. Okay, next we have the apples that I just chopped. I like to add walnuts. You can also add pecans, like candied pecans. I just didn’t have any on hand. Here are also some dried cranberries. Pumpkin seeds. And to top it off, I’m using Velaso feta cheese. You can use any kind of feta cheese if you want. You can also leave it out, but I like to add the feta cheese because it adds creaminess. That is perfection. Okay. The dressing consists of balsamic vinegar, dijon mustard, maple syrup, salt, pepper, um, garlic, and olive oil. The ingredients are minimal, yet they truly make this salad next level. [Music] [Music] [Music] Just look at the colors of this stunning salad. I mean, it’s seriously too pretty to even mix. After dressing the salad, mix it very well to make sure that every single part of that salad is coated in that delicious dressing. And that’s it, guys. You can eat this on its own. You can have it as a side dish with another meal. You can even add protein of your choice. You can add chicken, bacon, pushcuto, whatever your heart desires. You’ll need:
-3 or 4 sweet potatoes
-1/2 bag of kale
-1 apple
-1/2 cup dried cranberries
-1/4 cup pumpkin seeds
-1/4 cup walnuts
-1/2 block of valbreso feta cheese

Roasted sweet potato recipe:
-cinnamon (amount to your liking)
-olive oil

Salad dressing:
-1/4 cup balsamic vinegar
-3 cloves or garlic
-1 tsp dijon mustard
-salt
-pepper
-olive oil
