10-Minute Fancy Salad with a Wild Dressing Twist 🍊🥬#easyrecipe
This radicchio salad with blue cheese and orange-cacao vinaigrette is vibrant, bold, and takes just 10 minutes to throw together. It’s the kind of starter that looks fancy but is secretly super simple.
Ingredients
1 head of radicchio
1 fennel bulb
2 oranges
4 figs
50 g blue cheese
30 g walnuts
2 tbsp extra virgin olive oil
1 tbsp red wine vinegar
1 tsp honey
1 tsp mustard
1 tsp cacao powder
Salt and pepper to taste
Instructions
Halve the fennel, trim the tops, and slice it finely.
Segment the leaves of the radicchio and roughly chop the leaves.
Peel and segment 1 orange.
Toast the walnuts in a dry pan for 2–3 minutes, then roughly chop them.
Whisk together the olive oil, vinegar, cacao powder, zest and juice of 1 orange, honey, mustard, salt, and pepper.
In a large bowl, mix the radicchio, fennel, half of the orange slices, half of the walnuts and half of the figs. Drizzle with the dressing and toss gently.
Transfer to a serving bowl and top with crumbled blue cheese. Garnish with the remaining orange, figs, walnuts, and green fennel leaves. Serve immediately.
