Pesto Chicken Spaghetti Burrito
The great thing about Burritos is that you can put practically anything you fancy in them. After all, a Burrito is basically a meal inside a wrap. Consider a world however where instead of your classic rice, guacamole or beans you put spaghetti in a Burrito and see how that turns out. Sounds like the kind of world we would want to live it.
Well, we gave it a whirl and result was marvellous. Finally a tasty way to enjoy pasta on the go!
What You’ll Need:
500g spaghetti
Pesto, to dress your spaghetti, and a little more for the burritos
2 chicken breasts, butterflied
Basil leaves
Tortilla wraps
Red and Yellow peppers
Cheddar cheese, grated
How You Make It:
Grill your peppers until they’re nice and blackened. Don’t forget to season.
Grill your chicken until also nice and charred and cooked through. Season well also.
Cook your spaghetti in salty water according to packet instructions, then dress liberally with pesto.
Warm your tortillas until nice and pliable. Place a strip of dressed spaghetti horizontally across your tortilla. Place on some chicken and peppers, some cheese, a couple basil leaves and a drizzle of pesto.
Grab the top end of your tortilla and drag it back towards you so the two ends meet- this will make a semi-circle.
Unfold the tortilla again. Your filling should now all be bunched on one side of your wrap.
With both hands, pinch the left and the right side, then grab the bottom and roll upwards. Both ends should be sealed.
Grill this little burrito on a hot griddle pan for 10 seconds on both sides.
