長期保存!大根の甘酢漬け

We have 5 kg of horse radish right from our yard. We washed these cleanly already, so we would like to make sweet vinegar pickles with them. First, we temporarily put salt on them and prepare for further process. we use 2% of salt for 5kg horse radish, so 10g of salt this time. We cut heads and butts, then cut into half to one forth. Once we cut them all, we put salt on the surface and put them in a container. After putting salt, we would place them so that they could get weight evenly. We usually put twice as much of weights as horse radish, so it would be 10kg. Please don’t forget putting something between ingredients and weights. We would store this in a cool, dark place, but please take a look once in a while to make sure water comes out. If not, please place more weights on it or pour about 100cc to let it come out easier. It’s after a week, and the water already came out. We would permanently preserve it this time. We would first take them out of water and dry for half a day. Things we would need this time are, a large container that can hold everything, plastic bag (for pickles), 360cc of vinegar, 500g of sugar, 6 to 10g of kelp, optional citrus peels, 2 to 3 pieces of red pepper. We would put vinegar and sugar in a plastic bag together and mix it well, then put horse radish in it. Please let them adopt to the sauce and put kelp, citrus peels or red pepper in between. After that, we would squeeze the air out and put twice as much weight and wait for another month. We would be able to eat them after a month. But, please squeeze the air out once in a while and make sure they are soaked in the sauce. We may have been able to omit the first step and put everything together in a first place, but it may change how long we could preserve. After completed, please put them in small containers for further preservation in fridge. It’s after 2 weeks, but they already got good taste. Please give it a try.

<下漬け>
  大根: 5㎏
  塩: 10g(大根5㎏に対して2%)
<本漬け>
  酢: 360cc
  砂糖: 500g
  昆布: 6~10g
  干したゆず皮など(好みで)
  唐辛子(好みで)
