1 Tbsp Coconut Oil
3 oz Chopped, Red Onion
2 oz Chopped Bell Peppers
3 oz Sliced Crimini Mushrooms
3 cloves Garlic
1 Handful Baby Kale
1 Tsp Turmeric
2 Tbsp Nutritional Yeast
1 Tbsp Garlic powder
1/4 Tsp Black Salt
Black Pepper (to Taste)
1/4 Tsp Better than Bouillon Paste (Roasted Garlic flavor)

Preparation Time: 10 Min
Cooking Time: 15 Min
Total Servings: 6 Burritos

I used the OLE Whole Wheat Flax Seed tortillas.

Roasted Potatoes
1 Medium Russet Potato
1 Tsp Garlic Powder
1/2 Tsp Smoked Paprika
1 Tsp Coconut Oil
Salt and Pepper to taste

Roasted Sweet Potatoes
180g Sweet Potato
1 Tsp Garlic Powder
1 Tsp Coconut Oil
Salt and Pepper to taste

Preparation Time: 5 Min
Cooking Time: 30 Min (at 400F.)

Strawberry Oatmeal Crumble Bars
Crust & Crumble:
1/4 Cup Apple Sauce
2 Tbsp Coconut Oil
1/2 Cup Cane Sugar
1/4 Cup Coconut Sugar
1 Cup Unbleached All Purpose Flour
3/4 Cup Old Fashion Rolled Oats

Filling
2 Cup Chopped Strawberries
2 Tbsp Cane Sugar
2 Tbsp Lemon Juice
2 Tsp Corn Starch

Preparation Time: 15 Min
Cooking Time: 55 Min

Overnight Quinoa Carrot Cake:
2/3 cup Cooked White Quinoa
2/3 cup Almond Milk
1 tbsp Maple Syrup
1 tbsp Chia Seed
1/4 Tsp Cinnamon
1/8 Tsp Ground Ginger
1/8 Tsp Nutmeg
1 Tbsp Chopped Pineapple
1 Tbsp Dried Cranberries
1/4 Cup Grated Carrot

2 Tbsp Chickpea Flour
1 Tbsp Apple Cider Vinegar
4 Tsp Corn Starch

1/4 Tsp Black Salt
