Touch the area around the muscle to check for any hard spots. If there is a hard part, it is cartilage, so remove it. This chicken thigh had no hard parts. Next, remove this excess fat. Removing this will reduce the chicken odor. It’s such a yellowish place. After that, stretch the skin well. I don’t cut the lines. Because the gravy escapes. Next, season with salt (and pepper if you like). The amount of salt is about 0.8% of the weight of the meat. It’s 250g today, so it’s about 2g. And rub it well. This will make it delicious. No salt is applied to the surface of the skin. The reason will be later. Then, wait about 10 minutes and let the taste blend in. 10 minutes later… Let’s bake it. And that’s why I didn’t sprinkle salt on the skin. It bake a lot of skin, so if you sprinkle salt on it, it will have a burnt taste. I don’t like it, so I don’t sprinkle salt on the skin. By the way, if the fire is too strong, it will burn. So, after 5 minutes, I will check the skin. If it is too brown (pictured right), reduce the heat to low. Now bake for another 5 minutes. Finishing and summarizing 10 minutes have passed. Turn it over. Wow! it’s the best! This hasn’t cooked the meat yet. Reduce the heat to very low and bake for 3 to 5 minutes. It is more heat-retaining than baking. It’s cooked well, so cut it. It is the best crispy. When cutting, put the skin down. This will prevent the skin from peeling off. It’s a good sound. It’s cooked well and looks delicious. If it is not cooked, put it back in the frying pan and bake on very low heat. Let’s serve and eat. The sauce is soy sauce 1, mirin 2, and pepper.
