Braised mushrooms, polenta & blue cheese 🍄‍🟫

this is red wine bra mushrooms over plento with blue cheese now if you’re looking for a hug on a cold crisp day this is your go-to I promise this is something I will be making all seasoned long I got some wild mushrooms here quite the variety oyster King trumpet some shitake and some chestnuts we’re going to Brown those off add some onions a little bit of salt to help extract some of that moisture keep roasting them off until a lot of their moisture has evaporated then we’re going in with the red wine cooking that out until it’s evaporated and then some stock in our aromatics if you’re looking for a Cho to make your sauces thicker and a little more ous gelatin if you’ve never had Penta it’s kind of like Italian grits only it’s not it’s a little more complex than that but it’s a good starting point there’s so many ways to make Penta I’ll leave my tips and tricks on how I made this one down below but we’ll get into more variations throughout the season now how do you eat this well it could be dinner it could be like a side dish you can even cook some eggs up called Brunch have about it
