So, as befits the end of the year. This time, I would like to look back at the worst ranking of aged meat. So let’s get to it. The worst aged meat ranking in 2021 Let’s start with No. 5. This is the chocolate aged meat we served in July, 2021. This time, the aroma and sweetness of the chocolate completely transferred to the meat. Also, the meat just became harder and harder. I couldn’t bring out the best in the meat. Next time, use a non-sweet chocolate like 90% cocoa. I’d like to try it again. And now, the fourth place. No. 4 is the chili-aged meat that we served in March 2021. Chili peppers have a bactericidal and antiseptic effect called capsaicin. The meat itself has been affected by the chili pepper, so we ranked it lower. Also, compared to other times of aged meat… It didn’t change much, and it wasn’t aged well enough, so we ranked it And now for the third place. Third place goes to the dry yeast-aged meat we served in July 2021. Dry yeast is the yeast used to make bread. In this one, the meat smelled like bread, and the original flavor of the meat disappeared. I thought the yeast would work in the right direction, but it completely worked in the wrong direction. It’s not firm and it’s not full of flesh. It was just a hardened piece of meat with fibers. And now, before we move on to the second place, here’s an extravaganza. This is the blue cheese aged meat that we served in May of 2021. Blue cheese is cheese that’s been aged by blue mold. We tested this with the meat, and we tested it with aging x aging. I thought I’d eaten something like this before. It looked just like a Mac’s cheeseburger. The flavor of the cheese is transferred to the meat. Maybe it’s the pickle-like acidity that makes it similar to a cheeseburger. Let’s go back to the rankings. And now the second place. Second place goes to the yogurt-aged meat we served in September 2021. Yogurt is usually used to marinate chicken and other meat, and to make sauces. I thought it should go well with meat, but I have the impression that the original goodness of the meat has disappeared. The meat itself became more tender, but the flavor didn’t become as delicious. I’m a little disappointed, because I had high expectations. I think it’s best to use it after lightly marinating it in yogurt. And regrettably, the worst of the worst… This is the natto-aged meat that we served in August of 2021. This is the result of the decomposition of proteins by the Bacillus subtilis natto to produce amino acids. I was hoping it would boost the flavor, but… The smell of natto on the meat completely ruined it. The meat by itself was too tough. So I cooked it and ate it as a kimchi stir-fry. This is the one time I really wondered if I should keep it. Natto bacteria are the strongest. I wonder what kind of changes we’ll see in 2022 with other ingredients. We’re talking about differences in temperature, differences in humidity, differences in bacteria and how they grow. I think it would be interesting to look at more specialized things.     熟成肉と言えば美味しそうに思うけど、実は明確な基準がない為、熟成肉の管理等はお店次第
    昔から言われる、「腐る寸前が美味しい」と言われるのがそれ
    店次第では危険な熟成肉が提供されるかもしれない
    次に事件になるのは、熟成肉かもしれない
