French Onion Soup

    Ingredients:
    4 large yellow onions, thinly sliced
    3 tbsp unsalted butter
    1 tbsp olive oil
    1 tsp salt
    1 tsp sugar
    2 garlic cloves, minced
    1 tbsp Worcestershire sauce
    1/2 cup white wine or sherry (optional but adds flavor)
    4 cups beef broth (or veg broth if needed)
    1 tsp fresh thyme (or 1/2 tsp dried)
    Salt and black pepper to taste
    For topping:
    1 small baguette, sliced
    1.5 to 2 cups shredded Gruyère cheese (or mozzarella)

    1. Caramelize Onions:Cook onions with butter, oil, salt, and sugar over medium heat for 35–45 mins, stirring often, until golden.
    2. Add Garlic & Wine:Stir in garlic, cook 1 min. Add wine, scrape bottom, simmer 3–4 mins.
    3. Add Broth & Thyme:Pour in broth and thyme. Simmer 20–25 mins. Season with salt and pepper.
    4. Toast Bread: Bake baguette slices at 200°C (400°F) for 5–7 mins until crisp.
    5. Assemble & Broil:Ladle soup into oven-safe bowls, top with toasted bread and cheese. Broil 2–4 mins until cheese is melted and bubbly.
    6. Serve:Let cool slightly, then enjoy hot!
