in 2022. During the store relocation, they faced
property issues and were unable to open
for nine months. Overcoming these challenges they reopened
in Kamata in September 2024 . The owner, Mr. Hara, offers only two main dishes : “Fried Rice”
and “Sala Taiwan. ” The owner said, “Plate Taiwan” is a
registered trademark of “Jinsei Gyoza,” so without permission from my mentor , it
would all be a copy. “Jinsei Gyoza” is one of Japan’s top town
Chinese restaurants . Their main dish is this “Plate Taiwan,”
and through a connection, I learned how to
make the char siu. Later, they also taught me how to make
“Plate Taiwan.” (Started making it) Char siu preparation: Using pork shoulder meat . Owner: “About 5 kilograms per piece . When you boil 10 kilograms, it shrinks to about 7 kilograms. That’s the painful part . You can’t sell 10 kilograms of meat as

irresistible… Shop owner: I should mention that our rice
is delicious. (During the interview) I hadn’t let anyone
try it before, so I served them freshly cooked rice and
the char siu I marinated today! The rich umami flavor spreads with each
