Fresh, creamy, and full of crunch—this Avocado Chicken Salad is everything I love in a quick lunch or light dinner. It’s made with ripe avocado, lime, leftover roasted chicken, crisp apple, celery, and red onion. A simple, wholesome mix that’s satisfying without feeling heavy.
