ブリ大根 -Yellowtail radish-

Cut the skin of 1/3 radish into thick slices and bevel them. Add 1 tablespoon of rice to a pot of water to remove the scum without adding water. Parboil for 15 minutes. After parboiling, drain in a colander. Deep-fried: Rinse under running water . Add enough water to submerge the pre- boiled daikon radish and bring to a boil. When it boils , add 4 tablespoons of sake , 2 tablespoons of soy sauce , 2 tablespoons of sugar , 4 tablespoons of mirin, and cover for 10 minutes. 3 slices of Koto Kotoburi Sprinkle salt on both sides. Let it sit for about 15 minutes. Pour boiling water over it to remove the odor. Also remove dirt and scales. The odor from the yellowtail is now removed! Add the yellowtail cut into bite-sized pieces to a pot that has been boiled for 10 minutes.Simmer one piece of ginger for 5 minutes.Take out the ginger and let it rest for an hour to let the flavor infuse.Simmer on low heat for 10 minutes, stirring occasionally, and…it’s done.

・酒 大さじ4
・砂糖 大さじ2
・醤油 大さじ2
・みりん 大さじ4
・水 浸る程度
