S2Ep78-Stir Fry Shrimp with Eggs 滑蛋蝦仁

    RECIPE BELOW: This simple home-style dish provides a nice contrast of textures, from the silken tender eggs to the bouncy crunchy bite of the shrimp. It also has a pop of sweetness from the peas. ENJOY!

    Serves 4

    Ingredients:
    • 8 oz small shrimp, peeled, deveined & butterflied
    • 6 lg eggs
    • 1/4 C frozen peas-defrosted
    • 1 lg or 2 green onions, minced
    Oil for cooking

    Shrimp marinade:

    • 1/4 tsp White pepper
    • 1 Tsp sesame oil
    • 1 Tsp Shaoxing wine
    • 1 Tsp cornstarch

    Eggs marinade:

    5. I can't get over that pan. Its unique and beautiful. I think it came over to the US (Canada) on a clipper ship. A miner from the Gold Rush bought it and took it with him to California along with his pan and shovel. It was a lucky pan, and the miner made his fortune and returned to SF where the pan held pride of place in his kitchen. Two generations later it was still a cherished piece of equipment in his granddaughter's kitchen when the 1906 earthquake struck and the pan was lost in the rubble. A former solder from the Boxer rebellion who after the fall of the Ching dynasty had come to SF to look for work was passing by. He saw the handle sticking out from under a pile of rocks and pulled it out. He tried, but was unable to locate the former owner and he took it home with him. The pan continued to have many adventures, and always came through without a single dent. It was truly a lucky pan. Four more generations passed, and it found its way to Nancy's kitchen where it will spend the rest of its happy and productive life.
