Strawberry Kale Quinoa Salad (Whole Food, Plant-Based)

Strawberry Kale Quinoa Salad

Dressing:
-2 dried figs (you could also use dates)
-1/2 pound of strawberries
-1/3 cup balsamic vinegar

•Blend all ingredients on high until smooth and set aside.

Salad:
-2.5 cups of cooked quinoa
-1/2 pound of uncooked chopped kale
-1/2-1 red onion, diced (or sweet if you prefer)
-1/2 pound of sliced or chopped strawberries

•Place chopped kale, onion, and strawberries in a large bowl.
•Add hot cooked quinoa to bowl and mix. This will help to steam the kale making it easier to eat.
•Toss salad with dressing. You may add more balsamic if needed.
•Chill before serving.
