My Mornings In November | Ode To Autumn | Pumpkin Pie Season & Making a Dry Flower Bouquet
My autumn mornings alone in the countryside in Latvia. Early signs of winter, a home made pumpkin pie and how to make a dry flower bouquet.
Pumpkin Pie Recipe:
Crust –
230 g flour
35 g sugar
A pinch of salt
145 g cold butter (cubed)
3 Tbsp of ice water
Sift flour, sugar and salt into the bowl, add cold butter and mix (massage) it until the dough becomes crumbly. Add water gradually and mix after every spoon to form the dough into a ball. Refrigerate for 1h or freeze for 15 mins.
Filling:
1kg Pumpkin (whole)
3 eggs
590g sugar
175g single cream
1 vanilla pod
2 tsp cinnamon
1/2 tsp ground ginger
1/2 tsp ground cardamom
1/4 tsp ground nutmeg
zest + juice of 1 orange
Cut pumpkin into quarters and roast until soft (or use 500g pre-made pumpkin puree). Let it cool.
Blend pumpkin into puree.
In a separate bowl whisk sugar, eggs and cream. Pour into pumpkin puree, add spices, orange zest and juice.
Form the dough into 0.5 cm wide sheet, place into a buttered pie tray, pierce with fork, and bake with pie weight for 10 mins at 180C (if you don’t have pie weight, then place a piece of baking paper on top of crust and add some almonds or other nuts which you can use as weight and then eat later). Remove weight and bake for another 5 minutes.
Pour pumpkin filling into the crust, and bake for another 45 minutes.
Decorate with pecans and cranberries. Serve with vanilla ice cream. 🙂
