Welcome Back To @ItsCookingGood . Join Me for a quick and easy lunch using some leftover mushrooms. This Creamy Mushroom Soup is ready in under 10 minutes and makes a terrific lunch or dinner. This is literally throw and go. I add diced potato & onion, sliced mushrooms, Chopped Garlic, 1TSP Dried Rosemary or use Thyme (I had run out), Mushroom Stock & 1/2TSP of Porcini Mushroom powder to a pan, cook for 8 minutes, blitz and finish with 100ml of Double Cream, It couldn’t be easier. Like may soup recipes it is so simple and much tastier & cheaper than buying a tin or carton of ready made soup. Give this one a try, it won’t disappoint!
Ingredients: Adjust as needed – Below is quantities I used and would have made 4 starter portions or 2 main courses.
1/2 Punnet Mushrooms – Sliced
1/2 Onion – Diced
1 Potato – Diced
1 Garlic Clove – Chopped
1 Mushroom Stock Cube
1/2TSP Porcini Mushroom Powder
500ML – Water
1TSP Dried Rosemary or Thyme
Salt & Pepper
100ML Double Cream
Timings may vary depending on your cooking device & how you like yours cooked, please use the video as a guide. Please also check temperature on any cooked meats to ensure cooked through & safe to eat. Our timings were as shown & stated in the video.
