🫑 Stuffed Bell Peppers

* Green bell peppers 8
* Ground beef and pork 400 g
* Onion koji 1 tbsp (or 1 tsp bouillon powder)
* Egg 1
* Shiso leaves 8
* White bread 1 slice
* Milk 2 tbsp
* Black pepper A little
* Potato starch As needed

🍅 Shio Koji Ketchup Sauce

* Ketchup 5 tbsp
* Japanese Worcestershire-style sauce 2 tbsp
* Water 4 tbsp
* Shio koji 1 tsp (or a pinch of salt)

🥑 Shio Koji Guacamole

* Avocados 2
* Tomato 1/2
* Onion 1/4
* Cilantro 2 tbsp
* Sliced pickled jalapeños 2–3
* Lime juice 1 tbsp
* Shio koji 2 tsp (or 1/3 tsp salt)
* Black pepper A little

【About Koji Seasonings】🌾

I often use homemade koji seasonings in my cooking, but they can be substituted using the following as a guide 😊

• Salt Koji 1 tbsp → 1/2–2/3 tsp salt
• Onion Koji 1 tbsp → 1 tsp bouillon powder
• Soy Sauce Koji 1 tbsp → 1 tbsp soy sauce
