Vietnamese Pork Belly Banh Mi
Here is a sandwich, Vietnamese Pork Belly Banh Mi, that uses one of my favourite cuts of meat.
Ingredients:
2 pieces baguette
1/2 medium cucumber
1 red chilli (optional)
A few stalks of Cilantro
2 Tbsp mayonnaise
Pork Belly:
300 g pork belly
300 ml water
2 stalks lemongrass
3 garlic
1/2 tsp 5 spice powder
1 Tbsp fish sauce
3 Tbsp light soy sauce
1 Tbsp dark soy sauce
1 tsp sugar
Pickle Vegetables:
200 g daikon radish
100 g carrots
1/2 tsp salt
1 1/2 tsp sugar
175 ml white rice wine vinegar
175 ml water

Braised pork belly is my favourite meat in a Banh Mi. Most BBQ meats work well here as well. Feel free to use any savoury protein you like.
