Sausage, Spinach, and Egg Frittata

    You guys asked for and I am sharing the full recipe for my Sausage, Spinach, and Egg Frittatas that I meal prepped for my parents last week! These mini frittatas are perfect to keep in the fridge during the week for a quick breakfast on the go. A simple recipe that the entire family will enjoy!

    9 eggs
    5 oz cottage cheese
    Salt
    Pepper
    1/2 lb browned breakfast sausage
    Handful of spinach, wilted

    Preheat the oven to 350F.

    In a large bowl, add the eggs, cottage cheese, salt, and pepper. Whisk until well combined.

    Divide the sausage and spinach into the silicone muffin tins.

    Pour in the egg mixture about 3/4 full into each muffin tin. Bake until the eggs have just set, 30-35 minutes. Remove from oven, let cool, then carefully pop out each of the egg frittatas.

    For Meal Prep: Store in an airtight container in the fridge for up to 4 days. I reheat mine in the airfryer for 3 to 4 minutes. You can also re-heat in microwave for 45 seconds to 1 minute.
