AUTUMN CAESAR
1 bunch kale, destemmed & finely shredded (about 3 cups)
1 large shallot, thinly sliced
1/2 lemon, juiced
delicata squash “croutons” (below)
1/3 C pine nuts, toasted
1/3 C shaved parmesan
1/2 C @newmansown Creamy Caesar Dressing
for the squash croutons:
1 medium delicata, sliced into 1/2-inch cubes
2 Tbsps. olive oil, divided
1/4 C panko breadcrumbs
1/4 C grated parmesan
2 T finely chopped herbs (rosemary, thyme)
kosher salt & pepper
⇢ ROAST | Place cubed delicata on baking sheet. Drizzle 1 Tbsp. oil over top & season well with S&P. Toss to combine. In a medium bowl, combine remaining 1 Tbsp. olive oil, breadcrumbs, parmesan, herbs, & a pinch S&P. Mix to combine well. Press mixture on top of seasoned squash. Roast at 425 degrees F for 20-25 minutes, until tender & golden brown.
⇢ MASSAGE | Place kale in large bowl with shallots. Squeeze lemon juice over top. Use your hands to massage the kale, working the lemon into the leaves until they’re vibrant green & wilted. Set aside.
⇢ ASSEMBLE | To the massaged kale, add the squash croutons, pine nuts, & parmesan. Drizzle @newmansown Creamy Caesar Dressing over top. Toss to combine well. Serve immediately. Enjoy!
TIPS! 👇🏼
⇢ 3-4 minutes before the squash finish roasting, add the pine nuts to the sheet pan. They’ll be perfectly toasted by the time the squash is ready.
