Rockin Robin’s BEST Gluten Free Banana Bread Recipe EVER!

hey everybody today I’m making some banana bread and we’re gonna be making this gluten-free although you can make it regular by just swapping out the flour everything else is the same no big deal and I want to share with you a little story my son and his friend went to New Zealand recently they were traveling and they were talking with someone there about of all things bananas I know right we’re really strange but anyway so they they were talking to this guy and they were he was telling them that there are some fantastic bananas in Florida and that they should try them and so my son ordered a box of bananas at a price of $97 for between 10 and 14 pounds of bananas pretty expensive I know and they decided to make some banana bread and let me tell you it was the best-tasting banana bread that I’ve ever had so if you’re in Florida you might want to check that out the name of the website is Miami fruit org I have no affiliation but I just thought I’d throw it out there anyway I’m rockin Robin and I’m gonna show you how to make some delicious banana bread using store-bought regular bananas right after this [Music] let’s go over the ingredients first up we have our flour I’m using Bob’s Red Mill this is one-to-one gluten-free flour and you know like I said you can swap out regular flour if you like you need three bananas good-sized bananas here and make sure that they have quite a few brown spots on them you want it to be nice and you know very ripe bananas will need a couple of eggs some white sugar I have some raw honey here vanilla extract some butter for our spices I’ve got some baking soda salt cinnamon and nuts I’m using some walnuts here you can either leave them in or take them out either way you want to pre-heat your oven to 350 degrees Fahrenheit and you want to have a pan a loaf pan like this a medal works the best I think and we’re gonna coat this with some butter so that the bread doesn’t stick now I like using butter instead of you know the sprays because of the propellants I’d rather I’d rather you butter so that’s what we’ll do here I’ll take some butter and we’ll start spreading it throughout the pan all right so now we’re gonna take our ingredients and we’re gonna put them basically into two bowls we’re gonna have the bowl with the dry ingredients in the bowl with the wet ingredients so we’ll start with the dry ingredients I have my flour in the bowl already I’m gonna add the sugar to it the baking soda the salt and the cinnamon now you want to whisk this really well to combine everything because once we add our dry ingredients to our wet ingredients we’re just gonna fold it in we don’t want to over mix so we got to start out already having everything well combined now for our wet ingredients I’m gonna take the butter and I’m gonna melt it in the microwave now how I do it typically is I’ll place it in there for about 45 seconds on power level 3 take it out stir it up and once it’s all melted then you’re good to go but don’t boil it or don’t you know make it splatter so I’m gonna peel my bananas and I’m gonna put everything in here even the bruises I’m not gonna worry about that you want to make sure these bananas are nice and ripe that way they’ll be nice and sweet and your banana bread will just turn out so much better so buy them ahead of time let them sit on your counter and they will ripen up now we want to mash them and you want to keep mashing these until they turn into you know they get really mushy almost liquid like now next we’re gonna toss in that melted butter and you want to use a spatula to get every last drop out of there alright now we’re gonna add in the vanilla extract now we want to get our eggs in a separate bowl and whisk them up separately so that you know we get them really well combined egg yolk and the whites mixed together well those are mixed up good we’ll place them in our wet mixture and the last wet ingredient we have is the honey so if you were to use all sugar in this you would use one cup of sugar by the way I’ll put that down in the in the description of the video where you find the written recipe I’ll put the conversions down there for you in case you want to use just all white sugar then we’re gonna add that to our wet ingredients okay so now you want to just make sure that everything is really well combined in that honey is you know really combined in there and just first okay now what we do is we just take all of our dry ingredients and just pour it into the wet ingredients and we’re gonna fold this in you don’t want to over mix oh you just want to make sure everything gets wet okay today I’m gonna toss in the walnuts remember this is optional you want them you can have them you don’t want them you just leave them out so just keep folding things in until everything all the flour mixture looks like it’s you know mixed in all right so now we’re ready to pour this in our pan [Music] just spread it out a little bit push it into all the corners and we’re gonna pop this in the oven at 350 degrees Fahrenheit and we’re gonna check it at 45 minutes with a toothpick and see if it comes out dry all right so we’re gonna test our bread it’s been 40 45 minutes what we’re looking for is a clean toothpick coming out of here okay so that’s a little wet right there there’s still some moisture coming out on the toothpicks we’re gonna go another five minutes now you want to do this every five minutes and so you get a clean toothpick all right I’ll let my banana bread cook about 55 minutes member ovens will vary and it smells incredible love the smell all right I’m gonna cut into it it’s still warm you know how I like to eat my banana bread I really love it with a little bit of butter it’s still pretty hot especially when it’s hot like this when it’s warm whoops I’m gonna put a little butter in mine and if that melts a second [Music] really delicious guys its moist a beautiful banana flavor and aroma I like the little walnuts in there and a little bit of crunch very delicious man you guys are gonna love this mmm so good I loved a little bit of hint of cinnamon in there man I really loved the moistness though that’s Gluten Free Banana Bread Recipe

Ingredients:
2 cups Bob’s Red Mill Gluten Free 1 to 1 Baking flour
3 large bananas, very ripe with brown spots
1 stick butter from pasture raised cows
2 eggs, from pasture raised chickens
1 tsp. Vanilla extract
½ cup sugar
¼ cup raw honey
1 tsp. Baking soda
½ tsp. Salt
¾ tsp. Cinnamon
½ cup walnuts, chopped

Directions:
Preheat oven to 350 degrees F.

Take some butter about 1 tsp or 2 and grease the inside of a 9 inch by 5 loaf pan.

In a medium size bowl add the flour, sugar, baking soda, salt and cinnamon. Whisk until completely combined.

In a large mixing bowl, add the bananas and mash with a potato masher until almost liquidy. Melt the butter on the stove in a saucepan or in the microwave. If you use the microwave place the butter in a microwave safe bowl for 45 seconds on power 3. Stir. Go longer if needed until the butter is melted.

Add melted butter to the bananas and mix to combine. Then add the vanilla extract and stir again.

In a separate small bowl, add the eggs and whisk with a fork until blended and add this to the banana mixture and stir until well combined. Now add the honey and mix well.

Pour the dry ingredients into the wet ingredients and fold in. Don’t overmix here, just fold until all the dry ingredients are wet. Add the walnuts and fold those in. I usually add these just before the flour is completely mixed in so I don’t overmix.

Pour batter into prepared loaf pan and spread it into the corners of the pan with a spatula.

Bake in the center of the oven at 350* F. for 45 minutes. Bread is done when a toothpick, inserted into the center of loaf comes out clean. If it’s not done in 45 minutes, continue to cook for 5 minute intervals until the toothpick comes out clean.
Let the banana bread cool for 10 to 15 minutes before cutting if, like me, you enjoy it warm out of the oven. I love mine topped with a bit of butter.

  1. Hi Robin! I haven’t really cooked or baked very much for several years- due to physical problems & pain; but today my bananas were very sorry looking, indeed! So I decided to look up a Gluten Free recipie- and found yours!! You use the same kind of Gluten Flour I had! (But never opened!) 😉. Bonanza! I knew you were my “go to” banana bread lady! Well, I’m cleaning up the MESS- not used to baking in my small kitchen, so I’ve covered a lot of surface with flour dust, etc!
    I gave up my large oven- it’s mainly storage for pots & pans; so I’m now using a larger countertop 2door oven that doubles as an air fryer!
    I’m starting to smell something wonderful, got my fingers crossed!! I’ll get back to you after it’s out, cooled, and tasted!! Can’t wait! This is a big deal for me today!😂

  2. I rarely post comments but this recipe is just so good. I made it a few hrs ago around midnight because I was craving banana bread and I didn’t have any mix in the house but I did have 3 super old bananas. I didn’t have baking soda or honey either but I replaced the baking soda for 3 teaspoons of baking powder and the honey for more sugar (1:1) and it was PERFECT. It tastes just like the GF banana mixes at the store. I’ve tried other recipes and they always come out too wet and doughy because gluten free flour can be a little weird to work with but that’s not an issue with this recipe. It’s moist and fluffy, not wet or doughy. Def try it!

  4. My son made this for me and it was absolutely fantastic just like a normal banana loaf. My son used half gluten free flour and half almond flour and it turned out fantastic. Can’t thank you enough for this recipe

  5. There are no measurements for the ingredients except for the eggs, and I think 1/2 cup honey, here or when I looked it up but I want to make this for my Mother who is on a Gluten free diet.

  6. I made it and it was perfect.
    I didn’t have any baking soda so I used 3x the same amount of baking powder instead.

    I had only cinnamon sticks so I blended that and used that.

    I’m so happy I found this, I usually use the boxed banana bread but this was 100% better, it was better than any banana bread I have bought from the shop.
