    Air Fryer Teriyaki Chicken Bites Recipe by What Shall I Cook

    Ingredients:
    • 500 g (1 lb) boneless chicken breast or thighs, cut into bite-sized chunks
    • 1 tbsp olive oil
    • Salt & pepper, to taste
    Teriyaki Sauce:
    • ¼ cup soy sauce (or tamari for gluten-free)
    • 2 tbsp honey or brown sugar
    • 1 tbsp rice vinegar (or apple cider vinegar)
    • 1 tbsp mirin (optional, adds depth)
    • 2 garlic cloves, minced
    • 1 tsp fresh ginger, grated
    • 1 tsp cornstarch + 2 tbsp water (slurry, for thickening)
    For garnish (optional):
    • Sesame seeds
    • Chopped spring onions

    Season chicken: Toss chicken pieces with olive oil, salt, and pepper.
    Air fry: Place chicken in air fryer basket in a single layer. Cook at 190°C / 375°F for 10–12 minutes, shaking halfway, until golden and cooked through (74°C / 165°F internal temp).
    Make teriyaki sauce:
    o In a small saucepan, combine soy sauce, honey, vinegar, mirin, garlic, and ginger.
    o Simmer for 3–4 minutes. Stir in cornstarch slurry and cook until thickened.
    Coat chicken: Toss cooked chicken bites in the teriyaki sauce until evenly coated.
    Serve: Garnish with sesame seeds and spring onions. Serve with rice, noodles, or as a snack.
