Ingredients: Rice, kelp, eel, boiled dried shiitake mushrooms, broth egg, lotus root, triple beans, new ginger, sesame. Eel is eaten in “Day of the Ox” in the Edo period, when the owner of the eel shop was having trouble selling eel in the summer. It is famous that the eel shop was very prosperous when it was recommended by the scholar Hiraga Gennai and he wrote “Today’s Day of the Ox”. First, boil the beans three times and then cool them in ice water. Boil the lotus root and soak it in the soup stock. When rice is cooked with kelp, it becomes delicious and delicious. Transfer the rice to the tub and add the vinegar while it is hot. When the rice cools, the vinegar becomes difficult to get used to. Use a fan to remove the rough heat. Add chopped dried shiitake mushrooms, lotus root and sesame seeds and mix. Add finely chopped beans and shiso if you like and mix. Serve on a plate and place broth egg, eel and seaweed. Finally, add new ginger and add beans three times to complete.
