#HomeMade recipe: Soba salad with cucumber and avocado • Simple Meals by Gorenje

Serves: 2

Ingredients:

● 100 g soba noodles
● 1 cucumber, sliced into strips
● 1 avocado
● 2 tbsp chopped coriander leaves
● 1 tbsp chopped basil leaves
● 1 tbsp oil
● 1 tbsp soy sauce
● 1 tbsp honey
● 1 tbsp tahini
● 2 tsp dijon mustard
● 2 tbsp lime juice
● 1 tsp lime zest
● 2 tbsp black sesame seeds
● 2 tbsp sesame seeds

Instructions:

1. Cook 100 g soba noodles according to the instructions on the packet (they vary from brand to brand). Once cooked, refresh under cold running water, drain well and add them in a salad bowl.
2. Cut one cucumber into thick strips and one avocado into small cubes. Add them into a salad bowl.
3. Add 2 tbsp chopped coriander and 1 tbsp basil leaves.
4. In a small bowl mix together 1 tbsp oil, 1 tbsp soy sauce, 1 tbsp honey, 1 tbsp tahini, 2 tsp dijon mustard, 2 tbsp lime juice and 1 tsp lime zest.
5. Pour the dressing over salad ingredients and mix everything together.
6. Sprinkle over sesame seeds and add a wedge of lime for extra zing.
