    Soaked in a savory sauce Score the eggplant skin with a knife Cut into bite-sized pieces Soak in water for 5 minutes Cut lotus root into bite-sized pieces Soak in water for 5 minutes 1 tsp ginger paste 3 tbsp soy sauce 2 tbsp mirin
    (*Can sub with rice wine + a little sugar) 1 tbsp sugar 1 tbsp vinegar 1/2 tsp dashi powder
    (*Optional: sub with bouillon or skip) 100 ml water Microwave 1.5 mins (600W) After 1.5 minutes Sauce is ready! Pat eggplant & lotus root dry Add sesame oil to pan Start with the lotus root Brown both sides nicely Remove and set aside Place eggplant skin-side down Sear both sides slowly Once soft and golden, it’s good! Add everything into the sauce Top with chopped scallions (optional) Full recipe
