Healthy Meal Plan To Cook At Home – Rainbow Salad, Ultimate Cobb Salad, Meatballs with Veggie

    The Rainbow salad or the Ultimate Cobb salad is an ideal meal to start your day with; full of vitamins and minerals that boost your immune system and increase your productivity level.
    These not heavy but satisfactory salads are typical summer meals, that could serve either as the main dish or side dish salad on your dinner table.

    Turkey meatballs with veggies will become your favorite healthy dinner recipe. This recipe will satisfy both meat and vegetable lovers.

    RAINBOW SALAD

    INGREDIENTS
    Parsley ½ bunch
    Avocado 1
    Lemon juice 2 tbsp
    Olive oil 2 tbsp
    Salt
    Lettuce 1 bunch
    Kidney beans 100 g
    Red bell pepper 1
    Yellow bell pepper 1
    Green onion 40 g
    Tomatoes 100 g
    Corn 100 g

    PREPARATION
    For the dressing blend the parsley, avocado, lemon juice, olive oil and salt.
    Place the cut lettuce in the large bowl, add the kidney beans, chopped bell peppers, green onion, tomatoes and corn.
    Pour the dressing and stir.

    ULTIMATE COBB SALAD

    INGREDIENTS
    Olive oil 2 tbsp
    Chicken breast 200 g
    Bacon 5 slices
    Salt
    Black pepper
    Olive oil 2 tbsp
    Apple vinegar 2 tbsp
    Mustard 1 tbsp
    Salt
    Black pepper
    Lettuce ½ bunch
    Eggs 2
    Cherry tomatoes 3
    Avocado ½

    PREPARATION
    Fry the chicken breast and bacon until golden, season with the salt and black pepper.
    For the dressing mix the olive oil, vinegar, mustard, salt, black pepper.
    Place the cut lettuce at the bottom of the plate, add the eggs, tomatoes, avocado and fried chicken with bacon.
    Top with the dressing and enjoy!

    TURKEY MEATBALLS WITH VEGGIES

    INGREDIENTS
    Ground turkey 200 g
    Bread crumbs 50 g
    Egg 1
    Green onion 30 g
    Soy sauce 2 tbsp
    Ginger 20 g
    Garlic 1 clove
    Salt
    Black pepper
    Onions 2
    Carrot 1
    Broccoli 150 g
    Olive oil 2 tbsp
    Salt
    Black pepper

    BAKE
    240°C / 464°F
    15 minutes

    Mango mash 100 g
    Vinegar 2 tbsp
    Olive oil 2 tbsp
    Ginger 20 g
    Garlic 2 cloves

    PREPARATION
    Mix the ground turkey with the bread crumbs, egg, chopped green onion, soy sauce, ginger, season with the salt and black pepper.
    Make small meatballs and place in the baking pan, add the chopped onions, carrot and broccoli.
    Pour the olive oil on top and season with salt and black pepper.
    Bake for 15 minutes at 240°C / 464°F.
    For the sauce mix the mango mash, vinegar, olive oil, ginger, garlic.
    Serve the cooked dish with the sauce and enjoy!
