This time I will make a delicious doria filled with shrimp.

Here are the ingredients.
Milk, peeled shrimp, shimeji mushrooms, onions, flour, granulated consommé, miso, salted butter, salt and pepper, rice, melted cheese, salad oil,
This time, I will use these ingredients.
This time, I would like to use peeled shrimp for the shrimp doria.
For the peeled shrimp, you can use frozen or shelled shrimp.
Then I will add mushrooms to it.
I will use shimeji mushrooms for this dish, but you can use any mushrooms you like.
And here’s the key to seasoning.
This time, I will add miso.
The addition of this miso adds richness to the dish and makes it very tasty.

Now let’s make it.
To begin with, let’s prep these shrimp.
If the shrimp has a back, please cut into it with a knife and remove the back.
Now going to remove the odor.
First put the peeled shrimp in a bowl.
And here’s about 1/2 teaspoon of salt.
Here, outside of the amount.
And first of all, we rub salt into it.
After the salt has been rubbed in, now it’s time for the potato starch.
That’s 3 teaspoons of potato starch.
This is also out of the amount.
Rub this in.
This way you can easily remove the smell of the shrimp.
Now it is time to rinse this one thoroughly with water.
Wash it clean like this.
Then this shrimp here, yes, wipe off the water thoroughly.
Then I press down on the top with kitchen paper and wipe it off.
No pre-treatment is necessary, or something like that, but once you do it this way, you can get the smell out properly, so please do it.
The shrimp are now ready.
Now I will continue to cut the onions.
Onions, you know, cut them into thin slices.
Cut this one along the fiber.
Cut off this middle core.
Cut the onions like this.
Then the mushrooms.
Cut off the bottom part of the mushroom, and then cut it in half.
The part that is stuck together should be loosened by hand.
Prepare the mushrooms this way.
Then here is the secret ingredient miso.
Dissolve it a little with the milk you use for this.
Be sure to dissolve this in the milk you are using, as it will form lumps if you put it in as is.
First, put miso in a bowl.
Then add a little bit of milk here.
And dissolve the miso in the milk.
Mix thoroughly to avoid lumps.
The miso I am using this time is a combination miso.
For this miso, you can use whatever you like.
When this much is dissolved, add about 1 tablespoon of milk again, and mix.
Please dissolve miso like this.

Now let’s make the white sauce.
First, salad oil in a frying pan.
And then put it on the fire.
The heat is medium.
Keep warm for 30 seconds at a time.
Once warmed for 30 seconds, add the onions here first and saute.
The heat level, you know, you can keep it on medium heat.
Let’s fry while spreading it all over.
When the onions have wilted like this, add the shrimp.
And then add the mushrooms.
Here’s the salt and pepper.
Adequate amount.
Then I fry this one.
Stir-fry over medium to low-medium heat, adjusting the heat as you go.
When the prawns are roughly 80% cooked like this, turn off the heat.
After turning off the heat, sprinkle the flour here.
When sprinkling the flour, sift it with a tea strainer or something like this.
Sprinkle the flour over the ingredients.
This will prevent lumps from forming when made into a white sauce.
Once you have finished dusting everything, toss the flour all over the ingredients once while it is still off the heat.
Once this flouriness is gone, add the butter here.
And this butter, too, if you add it later, it will add richness and mellowness and give a delicious finish.
Then put it on the heat.
It’s a low-medium heat.
Melt butter once at this point.
Lightly, fry the ingredients and the rest of the flour.
When the butter is melted, add the melted miso.
And mix.
When it is blended here, add a little milk.
Milk, you know, if you add it all at once, it tends to lump together, so add it a little at a time.
Then blend.
A little bit, and when it comes to a boil, add milk again.
Then mix.
When it comes to a boil, add.
Then mix.
Gradually and gradually, let’s extend it in this way.
When it starts boiling again, add all the milk at the end.
I think it is best if you add it in about 4 parts.
When you have finished adding everything, add the consommé here as well.
Then mix.
And then, you know, heat it up until it thickens a little bit.
When you’re done adding all the milk, turn the heat down to medium.
OK.
Turn off fire.
If the mixture thickens, it is OK.
A little bit loose.
The rule of thumb is that when you trace with a wooden spatula, you should be able to see the bottom of the piece.
If it thickens this much, it is OK.
Then remove this one from the heat.

Now please prepare a plate of doria.
First of all, this is the bottom of the dish, and this is where we will put the white sauce.
I want to make it into a sandwich with white sauce.
Put it in until you can’t see the bottom of the bowl.
Then put the rice on top of this.
Once the whole thing is laid out, pour the white sauce over the top again.
Put it on like this.
And put a lot of melted cheese on top of this.
Now let’s bake this in the toaster until the cheese is melted and browned.
If you don’t have a toaster, bake in the oven.
Then I would like to bake it.
It is baked.
Bake until a nice brown like this.
By the way, I baked it at 1200W for about 5 minutes.
This is just a guideline.

And when you are done adding the milk, make sure to heat it until it thickens a little bit.
I would suggest that you loosen it up a little more than you would a regular white sauce.
And here’s the key to baking.
This time I sandwiched the rice with white sauce.
This makes it very rich and tasty.
Usually, in a doria, the bottom part of the rice is made like a risotto, and by doing so, you can easily create a risotto-like finish.
I think it would be great if you could put some melted cheese on top and bake it until browned.
