Lemon Herb Roasted Pork Salad with Butternut Squash with Balsalmic Vinaigrette
Ingredients – 1 Serving adjust for family size
Pork tenderloin roasted and cubed
1 bag Red butter leaf lettuce
1/2 cup Butternut squash roasted
1/4 cup Craisens
2 tbsp Feta cheese crumbles
4-6 Cherry tomotoes
Olive oil
Salt, pepper, garlic to taste
Dressing
1 tbsp Balsamic vinegar
1 tbsp Olive oil
1/8 tsp Salt
1/8 tsp Pepper
1/8 tsp Granulated garlic
1/8 tsp Italian seasoning
Directions:

2. After pork has cooled cut into cubes.
3. Cube up butternut squash if it is not already.
4. Toss butternut squash in a bowl with olive oil, salt, pepper, and garlic to taste
5. Place butternut squash in a cooking pan and roast for approximately 15 minutes at 350°. Let cool slightly.
6. Add approximately 2 cups Red butter leaf lettuce to a bowl.
7. Place tomatoes, Feta cheese, butternut squash, craisens, cubed pork on top of salad.
8. Blend or mix all dressing ingredients until fully combined.
9. Toss salad with dressing and enjoy
