Ingredients
– 2 potatoes
– 1/2 tsp salt
– 1/2 tsp oregano
– 1 tsp paprika
– 2 tbsps olive oil
– 2 tbsps grated or powdered parmesan cheese
– 5 tbsps cornstarch or potato starch

Instructions
– Wash and peel the potatoes and slice them as thinly as possible
– Rinse the sliced pieces to remove starch
– Once rinsed, add the salt, oregano, paprika, olive oil, parmesan, and cornstarch to the pieces and mix them nicely so that every individual piece is coated with the seasoning
– Take a frying pan and add about 2 tbsps of neutral vegetable oil to it and lay out the potato slices in a circular pattern so that they overlap and look like a flower
– Turn on the heat to low and cover the pan with a lid and cook for 8 minutes
– After 8 minutes, remove the lid, and flip the frittata and turn off the heat for 3 mins. Then turn it back to low heat and cook the other side for 8 mins with a lid on.
– That’s it! You’re done. Cut it into and see the beautiful layers of the potatoes.
